Steps:

  • Make the crust: Put the flour, sugar and fine salt in a food processor and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal. Add 2 tablespoons ice water and pulse until the dough just comes together, adding up to 2 more tablespoons ice water if needed. Transfer to a sheet of plastic wrap and pat into a disk; wrap and refrigerate until firm, about 1 hour.
  • Coat a 9-inch springform pan with cooking spray. Roll out the dough into a 12-inch round on a floured surface. Ease into the prepared pan and press into the bottom and up the side; trim to make a 2-inch-high crust. Prick the bottom a few times with a fork; refrigerate 30 minutes. Preheat the oven to 350 degrees F.
  • Place the dough-lined pan on a baking sheet. Line the dough with foil and fill with pie weights or dried beans. Bake until the edges are just lightly golden, about 20 minutes. Remove the foil and weights; continue baking until the crust is lightly golden all over, 15 to 20 more minutes. Transfer to a rack to cool completely. (The crust can be made a day ahead; cover and store at room temperature.)
  • Make the filling: Thinly slice the Swiss chard leaves and cut the stems into 1/4-inch slices. Heat the olive oil in a large skillet over medium-high heat. Add the onion and chard stems, season with kosher salt and pepper and cook, stirring occasionally, until the onion is soft and just beginning to brown, about 10 minutes. Add the dill and lemon zest and cook, stirring, 30 seconds. Add the chard leaves and cook, stirring, until wilted, about 4 minutes. Remove from the heat and stir in the parsley, 3/4 teaspoon kosher salt, and pepper to taste. Let the filling cool, then squeeze out the excess moisture.
  • Transfer the filling to a food processor; pulse until coarsely chopped. Transfer to a bowl and stir in the shredded cheddar, half-and-half, parmesan, egg and nutmeg. Pour into the crust and bake until set, 45 to 50 minutes. Top immediately with shaved cheddar and let melt. Serve warm or at room temperature.

Steps:

  • Heat oven to 375 degrees. Grease six 6-ounce or eight 4-ounce timbale molds or muffin tins. Use 1 tablespoon breadcrumbs to coat them.
  • Place bacon in a heavy skillet over low heat. When it turns golden, add chard stems, leeks and garlic. Season with salt and pepper. Cook over low heat until vegetables are tender but not brown. Transfer to a bowl.
  • Add chopped Swiss chard leaves to skillet, increase heat to medium-high and cook until leaves are wilted. Add leaves to bowl. Mix in 1/2 cup dry breadcrumbs and egg yolks. Beat whites until they hold peaks but are still creamy. Fold in. Season with salt and pepper and stir in nutmeg.
  • Transfer mixture to prepared molds. Sprinkle remaining breadcrumbs on top. Bake 20 minutes. Unmold and serve hot.

GARLICKY SWISS CHARD

There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

Steps:

  • Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips.
  • Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil. Cover pan and let cook for about 2 minutes, until chard is wilted. Uncover, stir and cook for 2 minutes longer. Season with salt.

29 SWISS CHARD RECIPES FOR NEVER-BORING GREENS

From epicurious.com
Estimated Reading Time 5 mins
  • Tomato and Cannellini Bean Soup. Swiss chard recipes can go many different directions, but one of our favorite easy ways to use chard is in soup. This hearty vegetarian bowl brings together canned whole tomatoes, fennel, garlic, dried white beans, and a sprinkle of chopped almonds.
  • Coconut Creamed Greens. This platter of greens is everything we want: creamy from coconut milk, spiced with ginger, chile, and turmeric, with a fresh blast of cilantro and the crunch of toasted coconut flakes.
  • Swiss Chard–Tahini Dip. Spinach-artichoke dip is grand, but this Swiss chard situation might be even better. Nutty with tahini and bright with lemon, it's remarkably creamy without any dairy or mayo.
  • Chickpeas and Chard with Poached Eggs. This one's a supremely comforting, satisfying meal. You can cook the chickpeas a day or two in advance, then sauté some onion and the chard stems before adding in the chickpea-cooking liquid, chard leaves, and eggs which simmer right in the broth.
  • Sausage and Ricotta Baked Cannelloni. Pasta sheets filled with ricotta, sweet Italian sausage, and Swiss chard get a luxurious cloak of béchamel and a drizzle of marinara before baking.
