Salmon With Peppercorns image

Steps:

  • Cut the salmon fillet slightly on the bias into four pieces of equal weight. Set aside.
  • Peel the onions and cut them crosswise in half. Cut the half into quarters. Cut the quarters into 1-inch cubes. There should be about 5 1/2 cups.
  • Heat 2 tablespoons of the butter in a heavy casserole and add the onion pieces. Cover. Cook over moderately high heat, stirring occasionally, about 15 minutes. The onions will start to brown. Uncover and add the vinegar. Cook briefly until the vinegar is almost evaporated and then stir in the honey. Cover tightly. Cook 10 minutes.
  • Sprinkle the salmon pieces with salt. Coat each piece with oil and equal amounts of coarsely cracked black pepper.
  • The salmon may be cooked on a grill or under the broiler. Preheat the grill or the broiler to high. If the fish is to be broiled, place the pieces skin side down on a baking sheet. Place the baking sheet under the broiler with the fish about 4 inches from the source of heat. Leave the broiler door partly open. Cook 3 minutes and turn the pieces; continue cooking about 3 minutes more. If the salmon is to be grilled, place the pieces on the grill skin side down. Cook about 3 minutes and turn the pieces; cook about 3 minutes more. Transfer the fish to a warm platter.
  • Heat the remaining 3 tablespoons of butter in a small saucepan and add the lemon juice and herbs. When the mixture starts to bubble, pour it over the salmon pieces. Serve the salmon with equal portions of the onions on the side.

Great for using left over chicken. As pointed out in one review be careful with the amount of salt salt as the Soy sauce is very salty in itself.

  • Remove seeds from peppercorns (good quality peppercorns have no seeds or only one or two), discard seeds and crush the peppercorns.
  • Mix remaining ingredients (except lettuce& chicken).

Roasted Sichuan Pepper-Salt image

Steps:

  • Mix together the peppercorns and the salt in a small bowl. Transfer the mixture to a medium-sized skillet and toast over medium heat, stirring constantly, just until the mixture is fragrant and smoking and the salt begins to turn golden, five to eight minutes. Be very careful not to let the mixture burn.
  • Remove from the heat and let cool. Then grind the pepper-salt until fine and sieve to remove any large pieces. Store in an airtight container.

Szechuan-Style Smoked Salmon image

Steps:

  • Combine marinade ingredients (soy, rice wine, ginger, sugar) in a wide bowl.
  • Add salmon and turn to coat in marinade.
  • Cover and refrigerate for 20 minutes and up to 1 hour.
  • Line a stir-fry pan or deep skillet and the inside of pan lid with heavy-duty foil.
  • Combine smoking mixture (brown sugar, rice, tea leaves, anise, cinnamon, peppercorns) and spread evenly in the bottom of pan.
  • Set a round cake rack over smoking mixture (Be sure the smoking element does not touch rack).
  • Remove fish from marinade and place on rack.
  • Pour marinade into a small saucepan and set aside.
  • Place pan, uncovered, over high heat.
  • When mixture begins to smoke, cover pan; reduce heat to medium-low and smoke until salmon turns a rich deep color, about 10 minutes.
  • Turn off heat; let stand for 5 minutes, undisturbed, or longer before removing lid.
  • Bring reserved marinade to a boil; add cornstarch solution and cook, stirring, until sauce thickens.
  • Strain sauce into a bowl, discarding solids.
  • If you plan to serve the fish hot, serve with the sauce on the side.
  • Otherwise, serve at room temperature with no sauce.

Lightly crush the peppercorns with the sugar using a mortar and pestle, rub onto both sides of the salmon steaks and place in a dish. Combine half the vinegar and soy sauce and pour over the fish. Set aside in a cool place for 1-2 hours, turning halfway.
  • Preheat the oven to 200°C/fan180°C/gas 6. Lift the salmon from the marinade and place on a baking tray lined with non-stick baking paper. Discard the marinade. Cook for 12-15 minutes, until just cooked through but still pink and juicy in the middle. Allow to rest for 10 minutes if serving hot, or, better still, allow to cool completely.
  • Make the salad. Shred the iceberg roughly and put into a large bowl. Quarter the cucumber and deseed by running the back of a teaspoon down the length of the seed cavity. Cut into long, thin slices and add to the bowl, along with the grapes. Mix the remaining vinegar and soy sauce with the ginger and some black pepper, pour over the salad and toss together. Check the seasoning and add a little more soy if you like, but not too much or the salad will turn brown. Divide between plates and top with the herbs. Place a salmon steak alongside and serve immediately.
