SZECHUAN NOODLES

This spicy Asian inspired dish is absolutely delicious. I saw this made on one of Ina Garten's cooking shows and immediately HAD to try it. I omitted the oil called for in the original recipe and replaced it with water instead. I also gave alternate ingredients to replace the honey as a sweetener in order to make this vegan friendly. Hope you like it!

Szechuan Noodles image

Steps:

  • Place the first thirteen ingredients (garlic through cayenne pepper) into a blender, and blend until smooth.
  • Cook the noodles of your choice according to package directions.
  • Drain pasta and place in a large serving bowl.
  • While still warm, toss the pasta with about 3/4 of the sauce.
  • Add the julienned bell peppers and scallions and toss well.
  • This dish is great served warm or even at room temperature.
  • Remaining sauce can be added if pasta seems too dry.

6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/4-1/2 cup water, as needed to blend
1/2 cup tahini
1/2 cup smooth peanut butter
1/2 cup soy sauce
1/4 cup dry sherry
1/4 cup rice wine vinegar
1/4 cup brown sugar or 1/4 cup honey
1/2 teaspoon hot chili oil
2 tablespoons dark sesame oil

Shanghai Noodle Salad image

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the Chinese noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until they have cooked through, about 5 minutes. Drain well in a colander set in the sink. Rinse the noodles with cold water several times to chill, then drain again.
  • In a large salad bowl, whisk together the ketchup, sesame oil, soy sauce, brown sugar, kosher salt, and lime juice until the brown sugar has dissolved. Place the noodles, green onion, carrots, zucchini, red pepper, sesame seeds, and red pepper flakes into the bowl, and gently toss to thoroughly mix the salad and coat with dressing. Chill at least 2 hours before serving.

I usually double the sauce ingredients. I do not find these are spicy, so you may want to add in some red pepper flakes or ground Szechuan peppercorns if you want some heat. Preparation time is an estimate.

Steps:

  • Cook noodles in large pot of boiling salted water until tender but still firm to bite. Drain; return noodles to same pot. Mix in 1 tablespoon oil and peanuts.

  • Prepare spaghetti according to package directions; drain, rinse with cold water, drain again.
  • Put spaghetti in a large bowl; set aside.
  • In a big skillet, heat 2 tablespoons sesame oil.
  • Add red pepper strips, green onions, and garlic; saute and stir occasionally for 2 minutes.
  • Stir in spinach; cover and cook over medium heat for 3 minutes or until spinach is wilted.

Steps:

  • Mix 1/2 cup vegetable broth, peanut butter, soy sauce, balsamic vinegar, chili-garlic sauce and minced garlic in medium bowl to blend well (sauce will be thick). Cook noodles in large pot of boiling salted water until just tender but still firm to bite, about 6 minutes. Drain. Rinse noodles under cold water and cool. Cut noodles into 4- to 5-inch lengths. Transfer noodles to very large bowl. Toss with oil to coat.
