TACO SALAD DIP
I made this up with ingredients I had when I needed something to take to a Cinco de Mayo luncheon. It has the ingredients of a layered taco dip, but the addition of lettuce makes it like a salad. The best of both worlds!

Steps:
- Mix ranch-style beans and refried beans together in the bottom of a shallow casserole dish; season with taco seasoning mix and stir. Spread the bean mixture into an even layer.
- Mix sour cream and onion soup mix together in a small bowl; spread over the bean mixture. Top the sour cream layer with salsa.
- Refrigerate dish until the bean layer firms, about 30 minutes.
- Layer lettuce atop the salsa. Sprinkle tortilla chips in a layer over the lettuce. Finish with a layer of Cheddar cheese.

- In Kitchen aid mixer whip the cream cheese, add the salsa; blend well.
- Place this mixture into the bottom of a 9x13-inch glass baking dish ( or similar serving dish)
- Layer all the ingredients except the tortilla chips/ Frito's into the pan.
- Serve with chips.

TACO DIP
This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

Steps:
- Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
- Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.

I made this dip and my dearest hubby just fell in love with it. I got this recipe in a email, but I rearranged it to suit my way of cooking and added ingredients I had on hand. It can be served cold or warm and I used Frito's to dip with.

- Brown ground beef in skillet.
- Add minced garlic,diced onion and diced green pepper.
- Cook for 5 minutes.
- Add refried beans,tomato sauce,seasoning mix and pepper sauce and heat until it bubbles.
- Spoon mixture in a 8x8 baking dish (I used a glass pie plate) and top with 1/2c.
- shredded cheese.

CREAMY SALSA DIP AND/OR TACO SALAD DRESSING
I'm posting this for everyone who has asked me for this recipe. Everytime I make taco salad I also make this dressing. And this is our favorite dip for tortilla chips. If you use hot jarred or homemade salsa add more sour cream to taste. This dip is also a great base for other Tex-Mex flavors...add shredded cheddar, sliced olives, sliced jalapenos, chopped cilantro and a squeeze of lime. Ole!
