Taco Salad - Low Carb image

Steps:

  • Brown the hamburger; drain off the fat. Stir in the seasoning mix. Allow to cool.
  • Place lettuce, tomato, avocado and cheese in a large bowl.
  • Blend the salsa and sour cream together (I use a food processor as we like ours smooth).
  • Add ground beef to the bowl.
  • Toss salad with desired amount of dressing and serve.

  • Cook and stir ground beef, onion, and jalapeno peppers together in a skillet over medium-high heat until meat is browned and crumbly, 7 to 10 minutes. Stir taco seasoning into meat mixture; bring to a simmer and cook until flavors combine, about 5 minutes.
  • Stir meat mixture, shredded lettuce, tomato, Cheddar cheese, salsa, and sour cream together in a large bowl. Divide taco mixture among 4 bowls and top each with avocado slices.

Then add the shredded meat, and and mix everything well with a wooden spoon. Cook until the meat turns brown.
  • Meanwhile, mix all the condiments in a small bowl, to make a keto taco seasoning. If you wish you can add a pinch of chili powder. Sprinkle the ground beef with the seasoning and the chopped cilantro, mix well and cook covered for 15 minutes more. Then turn off the stove and leave the meat there to keep the heat.
  • You can make the cauliflower rice in two or three different ways. You can either: (1) Cut into small florets and process in the food processor to obtain pieces similar to the size of a rice. (2) Cut the cauliflower into three or four large pieces and grate it with a kitchen grater. Discard the stems. (3) On a cutting board, with a sharp knife, cut very thin pieces of cauliflower until the desired size is obtained.
  • When you have the cauliflower rice, melt the butter in a pan and sauté the cauliflower until it is a little soft. Finally, sprinkle with the chopped coriander and reserve to serve.
