- Mix together the pineapple and marshmallows; set aside.
- In a saucepan, combine the reserved pineapple syrup, sugar, flour, egg and vinegar. Mix together well and cook over medium heat until slightly thickened. Set aside to cool.
- Add the whipped topping, pineapple mixture, apples and 3/4 cup peanuts. Mix together well and refrigerate until chilled. Sprinkle top with extra 1/4 cup peanuts.

Steps:
- Grease a cookie sheet liberaly with butter.
- Push stick or skewers into apples.
- In a large heavy sauce pan combine sugar and water.
- Cook over low heat and stir continuously until sugar dissloves.
- Add cream of tartar, butter, vinegar, and cream and cook stirring constantly, until mixture reaches soft crack stage or 290 degrees on a candy thermometer.
- Remove the pan from heat.
- Dip each apple into mixture and coat, then place on cookie sheet.
- Allow taffy to cool completely before serving.
- May package with colorful plastic wrap and ribbon.
TAFFY-NO-APPLE
Steps:
- Make the caramel: Pour the sugar into the center of a deep saucepan. Carefully pour the water around the walls of the pan, trying not to splash any sugar onto the walls. Do not stir; gently draw your finger twice through the center of the sugar, making a cross, to moisten it. Over high heat, bring to a full boil and cook without stirring until amber caramel in color, 5 to 10 minutes. Immediately turn off the heat and use a wooden spoon to stir in the butter. Slowly stir in the cream (it will bubble up and may splatter). Let cool slightly to thicken.
- Pour the caramel onto a well-buttered sheet pan and let cool to set up, approximately 2 hours. Cut walnut size squares of it and roll it in your hands into a ball then shove a sucker stick in the center and roll it in chopped peanuts. Place them on a plate covered with peanuts and chill 30 minutes to make them set up more.
TAFFY APPLE CAKE

Steps:
- Preheat oven to 350.
- Grease a 13x9 pan.
- Slice apples and lay all on bottom of pan.
- Sprinkle dry cake mix over the apples.
- Slice the sitck of butter in small pats and dot over the top of the cake mix.
- Pour the can of Eagle brand over all.
- Sprinkle with chopped nuts.
- Bake at 350 for 1 hour.
- Serve warm.

TAFFY
Steps:
- In a large saucepan, place all the ingredients except extracts, and gently stir them to combine. Place a candy thermometer on the side of the pan and bring to a boil, stirring only to prevent burning. Cook to hardball stage (265 to 270 degrees), remove from the heat, stir in the extracts, and pour onto a silpat-lined sheet pan or buttered sheet pan. Let it cool enough to handle then start rolling it into a log and stretching or pulling the taffy to work air in and make it white and opaque. Keep pulling and twisting until it hardens. Form long ropes of taffy, then cut them into pieces.
- Some tips when making taffy: Oil the top 1-inch of the saucepan's wall to keep the sugar from boiling over. Always use a pan bigger than you think you need to prevent boiling over. Always use a burner as big or bigger than your pan's bottom. Never scrape the bottom of the pan at the end, just pour out the syrup. Wash down the sides of the pan with a clean wet pastry brush to avoid crystallization.

- Combine the pineapple chunks and marshmallows. Mix together, cover and refrigerate overnight.

- In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.

- In a large skillet, combine 1/4 cup brown sugar and butter. Cook over medium-high heat until sugar is dissolved, stirring occasionally. Add apples. Cook, uncovered, for 12-15 minutes or until apples are tender, stirring occasionally; drain and set aside. , In a large heavy saucepan, combine caramels and cream; cook over low heat, stirring frequently. This is a really great recipe that I found in a Taste of Home cookbook. Plan a little bit ahead because it is really easy to make but does involve some chilling time. The salted peanuts really contrast nicely with the sweet ingredients. Make your salad pretty by adding some extra peanuts and apple slices to the top or layer it in a clear trifle dish. Enjoy!

- Drain pineapple, reserving juice.
- In a large bowl, combine marshmallows and pineapple; cover and refrigerate for several hours.
- In a small saucepan, whisk the egg and sugars. Turn the heat to low andwhisk in the flour, cider vinegar, and pineapple juice.
- Cook and stir until mixture thickens and gets a little bit glossy and reaches 160 degrees.
- Remove from heat (at this time I also pass the liquid through a mesh strainer to remove the little egg bits if there are any. Sometimes this happens if you dont whisk it all together well in the previous step). Cool completely and refrigerate.
- Fold the cool whip into the chilled dressing.

- In a large saucepan, stir together the sugar and cornstarch. Add the butter, salt, corn syrup and water; mix well. Bring to a boil over medium heat, stirring to mix in butter. Heat to 275 degrees F (134 degrees C), or until a small amount of syrup dropped from a spoon forms hard but pliable threads.
- Remove from heat, and stir in the vanilla, flavored extract and food coloring. Pour into a greased 8x8 inch baking dish. When cooled enough to handle, remove candy from the pan, and pull until it loses its shine and becomes stiff. Pull into ropes, and use scissors to cut into 1 inch pieces.
