GRILLED STEAK AND EGGS WITH BEER AND MOLASSES

- Make the sauce: In a medium saucepan over medium heat, melt the butter. Add the onion and garlic and saute until softened, about 3 minutes. Add the rest of the sauce ingredients; bring to a boil, then simmer until the sauce is reduced to 2 cups, about 30 minutes.
- Meanwhile, preheat a grill to medium-high. Season the steaks with salt and pepper and rub with the oil. Grill for 3 to 5 minutes per side for medium-rare. Let rest for 10 minutes before slicing. Serve with the beer-molasses sauce and the grilled eggs.
- Place a cast-iron skillet on the grill; add butter, oil or bacon drippings. Crack in eggs and season to taste (the Neelys use a blend of paprika, sugar and onion powder, plus salt and pepper). Cook until the edges are crisp but the yolks are still runny, 2-3 minutes.
ROOT BEER BBQ SAUCE
This BBQ sauce can be used a variety of ways- we've even put it on potatoes at my house! It's sweet, tangy, and has a small kick to it. The root beer can also be substituted with Dr Pepper® or Coca Cola®.

- Stir together the root beer, ketchup, orange juice, Worcestershire sauce, and molasses in a saucepan. Season with ginger, paprika, chipotle powder, garlic powder, onion powder, and red pepper flakes. Bring to a boil over high heat, then reduce heat to medium-low and simmer 15 minutes, stirring occasionally. Use immediately or store in the refrigerator up to a week.

- Combine a 12-ounce bottle of beer, 1 cup barbecue sauce, 1 seeded habanero chile, 1/4 cup chopped pickled jalapenos, 1 teaspoon chipotle chili powder and 1 clove garlic in a saucepan. Simmer until thick, stirring, 30 minutes. Remove the garlic and chile.

- Preheat oven to 225º F.
- In a food processor or blender, combine the paste ingredients and blend until smooth.
- Dry the ribs with paper towels, then rub them thoroughly with the paste.
- Place the ribs on two baking sheets and slow roast for 3-5 hours, or until red juice comes out when you poke the meat with a fork and the meat is tender and pulls easily from the bone. The longer you cook the ribs the better, just don't let them dry out.
- Remove the ribs from the oven.
- They can go right onto the grill, stand out for a while, or be refrigerated, covered, for up to 2 days.
- While the ribs are roasting, combine the sauce ingredients in a small bowl and mix well; set aside.
- Light a fire in your grill.
- You want a very low charcoal fire with the rack set as high as possible.
- Put the ribs on the grill and let them stay there as long as your patience allows.
- A light crust on the outside is the goal, and, depending on your fire, it can be achieved in 5 minutes per side or take up to 30 minutes per side.
- If you're into prolonging your guests' agony.
- Of course, the longer the ribs cook, the better.
- Brush them with the sauce during the last minute on the grill.
- Cut the ribs apart between the bones and serve with the remaining barbecue sauce on the side.

- Combine barbecue sauce, ketchup, beer, honey, lemon juice, vinegar, mustard, Worcestershire sauce, hot pepper sauce, pepper, garlicand onions in a large mixing bowl.

ROOT BEER BARBECUE SAUCE
I doubled the recipe and baked my chicken pieces in it browning the chicken pieces first, I added in 1 tablespoon chili powder and some cayenne pepper, for a sweeter sauce add in more brown sugar to taste, if you like a thick sauce then mix in a little water mixed with cornstarch towards then end of cooking then simmer for a couple minutes to thicken.

- If you are adding in onion and garlic, then saute first in a couple tablespoons oil in a heavy saucepan for about 5 minutes until soft.
