HOMEMADE TATER TOTS

Steps:
- In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
- Finely shred potatoes on a fine box grater. Season the potatoes with 1 1/2 tablespoons of salt and 1 teaspoon of pepper. Put the potatoes into a kitchen towel and squeeze out the excess liquid. Put the potatoes into a medium-sized bowl along with the egg and mix well. Add the flour and stir to combine. Stir in the cayenne, smoked paprika garlic powder, salt and pepper, to taste. The mixture should be workable but dry. Form the potatoes into balls or tots and fry, in batches, until golden brown, about 4 to 5 minutes. Remove from fryer and drain on a paper towel lined tray. Immediately season with salt and pepper, to taste. Transfer to a serving bowl and serve.
TATER TOTS

- Cook the potatoes in boiling water until tender. Then process them using a ricer or food mill OR mash them with a fork for a more lumpy texture.
- Add the flour, egg, some seasoned salt and pepper and combine.
- Form into balls, and then slightly flatten into discs. Let them cool completely.
- Heat some canola oil in a cast-iron skillet and fry the cooled tots until golden. Drain on a paper towel.
- You can freeze the tots after frying. Remove from the freezer when you need them and reheat in a 400 degree F oven for 10 to 12 minutes.

Steps:
- Press uncooked ground beef in a 9x13 pan.
- Season with salt, pepper & garlic powder.
- Add diced onions.
- Mix soup with 1/2 can of milk.
- Place cheese slices over meat & then pour soup mixture over cheese.
- Place tater tots close together until mixture is covered.
- Bake at 350°F for 1 & 1/2 hours.
- Enjoy!

- In a large skillet, cook potatoes, ham, onion and green pepper in oil over medium heat for 8-10 minutes or until browned, stirring constantly. (If using Tater Tots, break apart with a spatula; mix well.) Add eggs; cook and stir until eggs are completely set. Season with salt and pepper.

Steps:
- Brown ground meat with seasonings to taste (I use No Salt seasoning, such as Mrs. Dash) -- Put meat to side.
- Mix soups and mixed vegetables together, cook on medium to low heat, until warm. Add in meat to soup mixture, mix well.
- Pour into a casserole dish. Top with tater tots -- making a solid layer of tater tots. Sprinkle tater tots with shredded cheddar cheese.
- Cook for 30 minutes in 350 degrees F oven.

TATER TOT GREEN BEAN SURPRISE
The surprise is that this is delicious! This comes from my friend, Shawna, and is ridiculously easy to make. It seems to get even better the second day.

Steps:
- Brown ground turkey (or beef), season to taste (Johnny's Seasoning Salt is very good for this, but salt and pepper will do nicely), drain and set aside.
- Heat oven to 425 degrees.
- Line the bottom of an 11x13 rectangular baking dish with the frozen tater tots.
- Layer the browned ground meat next, then the green beans.
- In a bowl or large measuring cup mix the soup and enough milk that when mixed with the soup makes it easy to pour but not excessively runny.
- Pour mixture on top of the green beans and spread around to coat the top of the casserole.
- Top with the shredded cheddar cheese.
- Bake for 30-45 minutes until casserole is bubbly and the cheese is melted and starting to brown.
TATER TOT HOT DISH SURPRISE
Steps:
- Brown ground beef, drain if necessary. In a large greased casserole dish, layer ground beef, chopped onion and chopped celery. Add soups with a little milk or water for moistness. Approx. equal to 2 cans soup. Season with salt, pepper and garlic if you like. Layer with frozen vegetable. Arrange Tater Tots on top.
- Cover and bake at 350 for approx. 1 hour. Last 15 minutes add crumbled, cooked bacon and shredded cheese. Bake uncovered until cheese is melted.
