BAKED LIVER

This recipe is from my grandma she was a wonderful cook and baker. I will always cherish her recipes.

Baked Liver image

Steps:

  • 1. Set oven at 350 degress. Greese a baking dish. Put onions in pan, dot with maragrine. Add wine, parsley, bay leaf, and thyme, salt and pepper, and water. Cover pan with foil. Bake 30 minutes. Coat liver with flour. Arrange on onion mixture. Cover and bake 30 minutes. Remove foil and bake 10 minutes.

2 onions, diced
1/2 c margarine
1/2 c dry red wine
1/2 c parsely, chopped
1 bay leaf, crumbled
1 tsp thyme
1/8 tsp pepper
1 tsp salt
1/2 can(s) water
6 slice liver
1/2 c flour

If you love liver, you will love this dish. I have friends who did not care for liver but would eat this when ever I made it. Recipe came from the short-lived Betty Crocker "Sphere" magazine back in 1973

Baked Liver in Wine Sauce image

Steps:

  • Combine marinade ingredients and pour over sliced liver and cover. Refrigerate for 2-3 hours.
  • Fry bacon (I always use 1/2 pound) drain and crumble. Set aside. Cook the sliced onions in bacon drippings until golden brown and set aside.
  • Preheat oven to 350 degrees.
  • Drain liver, dredge with flour. Add butter to pan drippings and fry each piece of liver for a couple of minutes on each side. Place pieces in a 9-13 inch baking dish. Top with cooked onions and crumbled bacon. Stir the wine and entire can of mushrooms into the pan drippings, stirring up all the goodies and pour over the liver.
  • Cover and bake at 350 degrees for 30 minutes.

Sauteed Calf's Liver with Red Wine Vinegar image

Steps:

  • Sprinkle liver with salt and pepper; dust with flour. Melt butter in heavy large skillet over medium-high heat. Add liver and sauté until crisp and golden, about 3 minutes per side for medium. Transfer liver to plates. Add garlic to skillet; stir 30 seconds. Add broth and vinegar and boil 1 minute, scraping up browned bits. Season sauce with salt and pepper. Spoon sauce over liver; sprinkle with parsley.

12 ounces calf's liver, cut into 1/4-inch-thick slices calf's liver
All purpose flour
1 1/2 tablespoons butter
1 large garlic clove, minced
1/4 cup canned beef broth
1 1/2 tablespoons red wine vinegar
2 tablespoons chopped fresh parsley

Chicken Livers With Red-Wine Sauce image

Steps:

  • Heat half the butter in a heavy saucepan and add the onions. Cook, stirring, until they start taking on a little color. Add celery, carrots and half the garlic. Cook briefly, stirring, and sprinkle with 1 tablespoon flour. Stir to blend.
  • Add wine, broth, thyme, bay leaf, parsley sprigs, salt and pepper and bring to the boil. Let simmer 20 minutes. Line a sieve and pour in the sauce. Strain, pushing through as much liquid as possible. Discard the solids. There should be about 1/4 cup.
  • Meanwhile, pick over the livers, cutting away and discarding the connecting membranes. Cut the livers in half and then into quarters. Drain thoroughly in a sieve.
  • Blend the remaining 1 cup of flour, salt, pepper and half the sage. Dredge the liver pieces in the mixture and shake off excess. Line a large mixing bowl with a large sieve and have it ready for draining the livers.
  • Heat about one-third of the oil in a heavy skillet. When it is hot add one-third of the livers. Cook, turning the pieces so that they brown evenly. Cook 2 to 3 minutes until brown and crisp on the outside. Drain.
  • Add another third of the oil. When it is hot add another third of the livers. Repeat, draining the livers as necessary and cooking until they are all brown and crisp on the outside.
  • Heat the remaining tablespoon of butter in a casserole and add the remaining tablespoon of sage and remaining half teaspoon garlic. Cook briefly and add the sauce. Bring to a boil and let simmer about 1 minute. Add the livers and cook to heat thoroughly. Stir in chopped parsley and serve.

Steps:

  • Cook bacon in heavy large skillet over medium-high heat until crisp. Transfer bacon to paper towel to drain. Discard all but 2 tablespoons fat from pan. Crumble bacon.
  • Combine flour, salt, pepper and thyme in shallow dish. Add liver and turn to coat; shake off excess. Heat fat in skillet over medium-high heat. Add liver and cook until tender and brown on both sides, about 5 minutes. Transfer liver to plate; cover with foil and keep warm. Add onion to skillet and sauté until golden, about 5 minutes. Mix in broth, Port and vinegar. Boil mixture until reduced to sauce, about 2 minutes. Season to taste with salt and pepper. Pour sauce over liver. Sprinkle with bacon and serve.
