Tequila Lemon Chicken Breast image

Steps:

  • Pour tequila into the plastic containers. Squeeze juice from 10 or more lemons into the containers. Add some olive oil, and salt and pepper. Place the chicken breasts in the marinade and let marinate overnight in the refrigerator. The next day, preheat grill to high and place chicken breasts on grill. Prepare bowl of olive oil mixed with tarragon and rosemary, to taste, and brush onto chicken while grilling. Cook each side for about 10 to 15 minutes each.

1/2 liter tequila
10 lemons
Olive oil
Salt and pepper
10 boneless chicken breasts
Dried tarragon
Dried rosemary
1 or 2 large plastic containers (recommended: Tupperware)

TEQUILA CITRUS SHRIMP SKEWERS (LOW FAT)

This is one of the*best* tequila shrimp recipes, you can also make this recipe using chicken, I add in a couple of honey in with the ingredients and marinade for a much longer time (about 3-4 hours) --- you should get about 8 skewers with this recipe, depending on the size of your shrimp.

Tequila Citrus Shrimp Skewers (Low Fat) image

Steps:

  • In a large bowl stir together the tequila with the next 6 ingredients; add in the shrimp, toss to combine.
  • Cover and chill for about 1 hour.
  • Soak the wooden skewere in water for 30 minutes.
  • Alternately thread the shrimp, bell pepper pieces, orange and lime wedges onto wooden skewers.
  • Grill covered with lid over medium-high heat for about 5 minutes on each side or until done (do not overcook the shrimp!).

Steps:

  • In a bowl, pour in the olive oil, tequila, and citrus juice.
  • Ream the limes to get all the juice and add enough orange juice to get a full cup.
  • For herbs, remove the leaves and put them whole in the marinade.
  • Add jalapeno.
  • Add the zest of one lime and an orange.
  • Add salt and pepper.
