TEX-MEX CHEESE FONDUE
I went to a fancy Fondue restaurant with my daughter and can't wait to try making fondue myself--it seems so easy! I thought this would be a great recipe to start with. Recipe source: Bon Appetit (February 1990)

Steps:
- Place both cheese in a large bowl and add flour, toss.
- Rub inside of fondue pot with garlic. Discard garlic.
- Add wine and tequila to pot and warm over medium heat until tiny bubbles appear.
- Add one handful of cheese mixture to wine mixture and stir constantly until cheese melts. ADJUST HEAT SO MIXTURE DOES NOT BOIL.
- Repeat with remaining cheese; stirring until thick. Stir in cilantro and chilies and season with salt and pepper.
- Set pot over candles or Sterno on serving table. Serve with skewers of bread cubes, sausages and/or vegetables.
- Serve with tortilla chips if desired.
MEXICAN FONDUE

Steps:
- Preheat oven to 400 degrees F.
- Coat a large baking sheet with cooking spray.
- Arrange tortillas on prepared baking sheet and spray with cooking spray. Season the top of tortillas with cumin, salt and freshly ground black pepper. Bake 6 minutes, until golden brown and crisp. Remove from oven.
- While the tortillas are baking, in a medium saucepan, combine cheese, artichoke hearts, salsa, and spinach. Set pan over medium heat and bring to a simmer, for 5 minutes or until cheese melts. Pour into a serving bowl.
- In a large bowl, combine: the chopped avocados, lime juice, chopped cilantro, chopped tomatoes, salt and freshly ground black pepper and smoked paprika, to taste, if using.
- Adjust seasonings, if necessary.
- Serve cheese fondue with baked chips and guacamole.

- In a small bowl, combine the corn, tomatoes, green chiles and chili powder. Stir in cheese. Pour mixture into a 1-1/2-qt. slow cooker coated with cooking spray. , Cover and cook on high until cheese is melted, 1-1/2 hours, stirring every 30 minutes. Serve warm with bread cubes.

- Mix tomato, chile, and oregano in a small bowl. Season with salt; let salsa stand for 30 minutes. Meanwhile, toss both cheeses with flour in a medium bowl. Cook chorizo in a medium saucepan over medium heat, breaking up with a wooden spoon, until it begins to render, about 1 minute. Add onion and continue cooking until chorizo is cooked and onion is soft and translucent, about 5 minutes.
- Transfer chorizo mixture to a small bowl; return saucepan to heat. Add beer; simmer, stirring occasionally and scraping up any browned bits. Whisking constantly, add cheese mixture a 1/4-cupful at a time, allowing it to become blended and smooth between additions. Stir in chorizo mixture. DO AHEAD: Queso can be made 30 minutes ahead. Let stand at room temperature.
- To reheat, warm skillet with queso fundido over medium heat; stir until melted and bubbly.
- Using a slotted spoon, spoon salsa over queso. Serve in skillet with a basket of tortilla chips on the side.
