I love the bold flavor of these hearty sandwiches. They cook quickly on the grill and taste great whether they're topped with salsa or guacamole.

Steps:

  • Pound steak to 1/4-in. thickness. In a shallow dish, combine the onion, oil, lime juice, vinegar, garlic, chili powder, salt and cumin; add beef and turn to coat. Cover; refrigerate for 8 hours or overnight. , Drain and discard marinade. Grill steak, uncovered, over medium heat or broil 4 in. from heat for 3-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Slice meat across the grain. Serve on rolls. Top with salsa or guacamole if desired.

Steps:

  • Season the steak liberally with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a medium saute pan over high heat until it's almost smoking, then sear the steak on each side for 1 minute. Reduce the heat to low and cook the steak for about 7 to 10 minutes, turning once, until very rare in the middle. Remove to a plate, cover tightly with aluminum foil, and allow to sit for 10 minutes. Slice the steak into strips.
  • Using the same saute pan, heat 1 1/2 tablespoons of olive oil over medium heat. Add the onion and thyme and saute for 10 minutes, until the onions are brown and caramelized, stirring occasionally.
  • To assemble the sandwiches, spread a tablespoon of Mustard Mayo on the bottom half of each bun. Place a layer the steak strips on top of the mayo, sprinkle with salt and pepper, and top with the caramelized onion rings. Place the baby arugula on top of the onion rings, and cover the sandwiches with the top half of the buns.
  • Mustard Mayo:
  • Whisk the ingredients together in a small bowl. Serve at room temperature.

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until slightly softened, about 3 minutes.   • Lightly pound the steak between 2 sheets of plastic wrap until about 1/8 inch thick. Heat the remaining 2 tablespoons olive oil in the same skillet over medium-high heat. Add the steak in batches and cook until browned, about 30 seconds per side; season with salt and pepper. Transfer the steak to the bowl with the onion and garlic. Add the parsley and giardiniera brine and toss to coat. Drizzle the cut sides of the rolls with olive oil.   • In a small bowl, combine mayonnaise and chipotle pepper. Heat Texas toast on a foil-lined baking sheet according to package directions.
  • Meanwhile, in a large skillet coated with cooking spray, cook beef in batches over medium heat until no longer pink.

  • Finely chop the celery so that you have 2 cups; chop the onions finely to have 2 cups.
  • Mix onion and celery with wine, beef broth concentrate, tomato paste, Worcestershire sauce, and chili sauce until well-blended.
  • Cook mixture in a saucepan for 20 to 25 minutes, then press mixture through a sieve.
  • Cool.
  • Place chuck steak in a shallow pan or glass dish.
  • Pour marinade over top.
  • Turn steak in marinade several times and allow to marinate for 2 hours at room temperature.
  • Drain the steak, reserving the marinade.
  • Place steak on grill 6 inches above gray coals.
  • Grill 30 minutes, brushing with marinade and turning every 5 minutes.
  • Heat the remaining marinade and keep warm.
  • Toast rolls on grill.
  • Cut the beef into paper-thin slices and place on rolls.
  • Spoon hot marinade over meat and replace tops of buns.

Slice the bread and the tomatoes, set aside. Prep the steaks – season with salt and pepper. Heat a grill over medium-high heat, and cook your ribeyes (or New York Strip) to desired doneness (we like ours at medium rare – so remove steak from grill at 140°F and rest, for a final temp of 145°F).
