PORK CHOP DINNER FOR TWO

I've prepared this dish for a tableful of people, but it's also easy to fix just for two. If you like different vegetables, simply add them along with the other ingredients. My side dishes for this meal are toasted bread and salad. -Shirley Lazor Colorado Springs, Colorado

Steps:

  • In a large skillet, brown pork chops in oil. Place in a greased 8-in. square baking pan. Layer potatoes, onion and carrot over chops. Dot with butter. Sprinkle with salt and pepper. , Cover and bake at 350° for 55-60 minutes or until pork chops and vegetables are tender.

1 tablespoon canola oil
2 medium potatoes, peeled and sliced
1 medium onion, sliced
1 medium carrot, sliced
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon pepper

Texas Two-Step Pork Chops image

Steps:

  • Mix all ingredients except the pork.
  • Reserve 1/2 cup marinade for basting.
  • Place chops in resealable bag and add remaining marinade.
  • Seal bag, turn to coat meat.
  • Refrigerate for 4 hours.
  • Let chops return to room temp for 30 minutes.
  • Drain, discard marinade, and grill over medium heat charcoal until just barely pink (10 minutes) while basting and turning.

1/2 cup catsup
1/4 cup apple juice
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon hot sauce
1 tablespoon chili powder
1 teaspoon kosher salt
4 pork chops (one inch thick)

  • In a shallow bowl combine crumbs, chili and salt. In another beat the egg.
  • Dip chops in eggs then press them in the crumbs, making sure they are well coated.
  • Transfer to a 15" x 10" x 1" baking pan coated with non-stick cooking spray.
  • Bake at 350 F for 20-25 minutes, or until meat termometer reads 160°F.

Steps:

  • In a small skillet over medium-high heat, brown pork chops on both sides in oil; remove and set aside. Add garlic to the pan; saute for 1 minute. Stir in the broth, brown sugar, soy sauce and pepper flakes. Return chops to the pan; cover and simmer for 8-10 minutes or until a thermometer reads 160°., Remove chops and keep warm. Combine cornstarch and water until smooth; stir into the broth mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with chops.
