THAI BEEF

A delicious marinade for flank steak blending the flavors of crushed coriander seed, lime juice, and soy sauce. This marinade can be used well with other meats as well. Serve over rice or shredded Chinese cabbage and red pepper slices.

Steps:

  • Place flank steak in the freezer for 20 minutes.
  • Whisk coriander, brown sugar, soy sauce, lime juice, garlic, and ground ginger together in a bowl until marinade is well combined.
  • Remove steak from freezer and slice thinly across the grain. Place steak in a large bowl, pour marinade over steak, and toss to coat. Cover bowl and marinate at room temperature for 1 hour.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line bottom of a broiler pan with foil.
  • Lay steak slices in a single layer on the rack of the prepared broiler pan.
  • Cook in the preheated broiler, brushing occasionally with marinade, until steak reaches desired doneness, 1 to 2 minutes for medium rare.

Steps:

  • 1. Mix all ingredients in a bowl then add steak and marinade to a zip lock freezer bag and marinate in the refrigerator for 2 hours or overnight. 2. Preheat grill to high heat (PREheat being the operative word here). Remove steak from marinade, discarding marinade, and grill for 4 or 5 minutes per side turning only once for medium rare. Add a minute or two per side if you want medium well but you run the risk of the steak becoming tough. Your call. Remove the steak and allow it to sit for about 10 minutes before slicing. This will reuslt in a juicier steak. Now very important! Slice the steak on a bias against the grain. This is the trick for making both flank and skirt steaks tender. Serve warm with cooked rice or over a bed of greens or however.

■2 pounds flank Steak
■1/3 cup soy sauce
■1/4 cup fresh lime juice
■2 tablespoons Thai chili paste (optional, read above)
■2 tablespoons dark sesame oil
■1/4 cup chopped cilantro
■3 tablespoons sliced lemon grass
■1 tablespoon grated fresh ginger
■1 tablespoon ground coriander
■1 teaspoon red pepper flakes
■1 tablespoon fish sauce
■4 cloves garlic, minced

  • In a small bowl, combine the first 7 ingredients. Transfer 3/4 cup marinade to a large bowl; add garlic and sesame oil. Score surface of flank steak, making diamond shapes 1/4 in. deep. Place steak in bowl; turn to coat. Cover and refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for basting., Drain and discard marinade from steak. Lightly oil the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 7-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting occasionally with 3 tablespoons of the reserved marinade. , Let stand for 5 minutes; slice across the grain. Heat remaining marinade; serve over beef. Sprinkle with green onion.
