THE BEST MEATLOAF I'VE EVER MADE
When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
- In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
- Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
- In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

THE BEST MEATLOAF EVER
One meatloaf recipe to rule them all! Bon Appetite's take on meatloaf, originally entitled BA's Best Beef-and-Bacon Meatloaf. I can't explain why all of these ingredients work so well together, but I can tell you that this is the best meatloaf I've ever had! The meat mixture was a bit 'wet' when I put it together but it cooked up beautifully and it was easy to cut. I would suggest doing a search for "One meatloaf to rule them all" to get Bon Appetite's explanation of WHY it works, but here is how to do it- and it is so worth the extra dishes to wash!

Steps:
- Preheat oven to 350°.
- Line a rimmed baking sheet with foil, then parchment paper.
- Heat oil over medium in a small skillet. Cook onion and garlic, stirring occasionally, until very soft, about 4 minutes. Transfer to a large bowl.
- Meanwhile, bring ketchup, vinegar, brown sugar, and cayenne to a boil in a small saucepan, reduce heat, and simmer, stirring occasionally, until slightly reduced and syrupy, about 5 minutes.
- Transfer 2 tablespoons ketchup mixture to a blender; add broth and parsley and blend until smooth. Set remaining ketchup mixture aside.
- Add broth mixture, eggs, breadcrumbs, Parmesan, salt, and pepper to onion and garlic; mix to combine.
- Add beef and mix well with your hands to combine.
- Transfer meatloaf mixture to prepared pan and form into a long log (about 12"x5"), smoothing surface.
- Spread reserved ketchup mixture over top and drape bacon in a crisscross pattern over loaf, tucking underneath.
- Bake until an instant-read thermometer inserted into the center registers 165° and bacon is crisp, 70-80 minutes. Let rest 10 minutes before slicing.

THE "BEST" MEATLOAF EVER!
My mother got this from my grandmother and her mother. The word meatloaf just doesn't sound appealing, but after making it for my husband for the first time, he was in love. Now everytime I make meatloaf he is on top of the world. This dish is even a child pleaser as my 4 year old daughter is begging for seconds. To make it a little healthier, I use a loaf pan with an insert so that the oil and grease from the beef drain away and the meatloaf is not sitting in it.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl combine all the ingredients except for the ketchup until well distributed.
- Shape the ground beef mixture into a loaf and place in the loaf pan.
- With the ketchup, "ice" the meatloaf as if you were icing the top of a cake, and use more or less ketchup to suit your taste. In my family we like it with alot of ketchup.
- Bake in oven for 55 - 60 minutes.
- We serve this dish with mashed potates and corn.

- In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in the onion, carrot, cheese and seasonings. Crumble beef over mixture and mix well. , Shape into a 7-1/2x3-1/2x2-1/2-in. loaf in a shallow baking pan. Bake, uncovered, at 350° for 45 minutes. , Combine the topping ingredients; spoon half of the mixture over meat loaf. Bake 30 minutes longer or until meat is no longer pink and a thermometer reads 160°, occasionally spooning remaining topping over loaf. Let stand 10 minutes before serving.
