CHEESY LAMB CUPS

I first made this special main dish for a 4-H demonstration, and it won an award. Now it's a winner with my family.-Pat Horton, Riverton, Wyoming

Steps:

  • In a small bowl, combine the soup mix, bread crumbs and evaporated milk. Crumble lamb over mixture and mix well. , Press half of the mixture into 12 greased muffin cups, filling each half full. Press one cube of cheese into the center of each cup. Cover with the remaining lamb mixture, mounding each slightly. Bake at 375° for 20-25 minutes or until a thermometer reads 160°. , Meanwhile, combine the soup, milk and Worcestershire sauce in a small saucepan; heat through, stirring until smooth. Serve over lamb cups.

1 envelope onion soup mix
1/3 cup dry bread crumbs
1 cup evaporated milk
2 pounds ground lamb
4 ounces cheddar cheese, cut into 12 cubes
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1/2 cup milk
1 teaspoon Worcestershire sauce

Filo Cups With Spiced Lamb, Mint and Feta Don't be intimidated working with filo; these pastry cups are really quite simple. While working, cover the unused filo with plastic wrap and a damp dish towel to prevent it from drying out.

Steps:

  • Preheat the oven to 350 degrees F. Mold 3 filo squares into the bottom of a miniature (1-inch) muffin tin. Place 3 more filo squares at a 45 degree angle on top and press gently into the muffin cups. Brush lightly with melted butter. Cook until lightly golden brown, 4 to 6 minutes. Let cool. Place on a baking sheet and cover tightly with plastic wrap until ready to use. Heat the oil in a medium nonstick skillet over medium heat. Add the onions and garlic. Season with 1/4 teaspoon of the kosher salt and 1/8 teaspoon of the pepper. Cook until the onions are tender, 5 to 7 minutes. Add the lamb, black currants, cumin, ginger, cinnamon, allspice, remaining 1/4 teaspoon kosher salt, and remaining 1/8 teaspoon pepper. Cook until the lamb is cooked through, about 5 minutes. Stir in the mint. To Assemble: Place 1 heaping teaspoon of the lamb mixture in each filo cup. Top with a heaping 1/4 teaspoon feta. Serve while filling is warm.

  • Wash the Lamb's Quarters if you have any reason to suspect they’re dirty. Working in batches if needed, steam the Lamb's Quarters until tender (cook them a little longer than usual as this needs to be spreadable) then cool naturally spread out on a baking sheet. Chop the greens medium-fine and reserve, making sure to chop up any stems.
  • In a small pan, heat the oil with the garlic*(see note) on medium heat until the garlic is starting to brown around the edges and is aromatic, about 5 minutes. Swirl the pan occasionally to promote even browning.
  • Add the cumin to the pan, turn the heat off, and swirl to allow the garlic to continue cooking with the residual heat. Add the cumin and crushed red pepper to the garlic and stir. Do not allow the garlic to burn. If you're unsure about the color, go lighter as opposed to darker.
  • Scrape the garlic-cumin-chili oil onto the Lambs Quarters, then add the remaining ingredients, mix well, taste and adjust the seasoning for lemon juice and zest* (see note), salt, and herbs, then continue tasting and adjusting the seasoning as needed until it tastes good to you. I like it with just a hint of spicy heat.
