Steps:

  • Make tomato sauce:
  • Pulse tomatoes with juice (1 can at a time) in a blender until almost smooth.
  • Heat oil in a wide 10-to 12-quarts heavy pot over medium-high heat until it shimmers, then sauté onion until golden, about 6 minutes. Add garlic and sauté 1 minute.
  • Add tomato purée, bay leaf, and 1/2 teaspoon salt and simmer, uncovered, stirring occasionally, until thickened, 40 to 45 minutes. Discard bay leaf.
  • Make braciole while sauce simmers:
  • Stir together garlic, parsley, cheese, and pancetta.
  • Pound top round to 1/8 inch thick between 2 sheets of plastic wrap with a rolling pin or meat pounder. Spoon parsley mixture evenly over beef cutlets (about 3 tablespoons each). Starting with a short side, roll up cutlets and tie at each end with string to make braciole.
  • Make meatballs:
  • Form reserved meatball mixture into balls (about 16), using a 1/4-cup measure.
  • Cook meats:
  • Heat 2 tablespoons olive oil in a 12-inch heavy skillet over medium heat until it shimmers. Season braciole with 1/2 teaspoon salt and 1/4 teaspoon pepper (total) and brown well in 2 batches, turning, about 6 minutes per batch. Transfer to a large shallow pan.
  • Add 2 tablespoons oil to skillet and brown sausage in 2 batches, turning, about 6 minutes per batch. Transfer to pan with braciole.
  • Pat pork shoulder dry and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add 2 tablespoons oil to skillet and brown pork shoulder all over, about 5 minutes. Transfer to pan.
  • Pat pork ribs dry and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Add remaining 2 tablespoons oil to skillet and brown ribs well in 2 batches, turning, about 6 minutes per batch. Transfer to pan.
  • Heat reserved oil from polpette in skillet over medium heat until it shimmers. Fry meatballs in 2 batches (do not crowd), turning occasionally, until well browned, about 6 minutes per batch. Transfer to paper towels using a slotted spoon. (Discard oil.)
  • Finish ragù:
  • Return sauce to a simmer and carefully add all meats and juices. Simmer, partially covered, gently stirring occasionally (do not break up meatballs), until all meats are tender, about 2 1/4 hours.
  • Transfer meats with tongs to a large platter. Serve with fettuccine and remaining sauce.

For tomato sauce:
5 (28-ounce) cans whole tomatoes in juice (preferably Italian)
1/2 cup olive oil
1 large onion, finely chopped
5 garlic cloves, minced
1 Turkish bay leaf or 1/2 California
For beef braciole:
4 garlic cloves, minced

1 1/2 pounds beef top round, cut across the grain into 1/4-inch slices

Reserved meat mixture and frying oil from polpette
1/2 cup olive oil for frying, divided
1 pound sweet Italian sausage links
1 pound hot Italian sausage links
1 1/2 pound boneless pork shoulder, cut into 2-inch pieces
2 pounds country-style pork ribs

Steps:

  • Crepes: Combine eggs, milk, and sugar. Add the flour and whisk well. Refrigerate for one hour. Rub a skillet with butter. Add enough batter to coat the bottom of the pan. Swirl pan to coat evenly. Turn crepe and cook until lightly golden brown. Repeat with remaining batter.
  • Custard: Put the milk, cream, and vanilla bean into the saucepan and heat until almost boiling. Add the sugar to the yolks and whip well. Pour the hot milk onto the beaten yolks and cook until the mixture reaches 185 degrees F. Remove from heat and let cool completely. Cover and refrigerate the custard until ready to serve.
  • Spread cut fresh fruit over each crepe and sprinkle with maple syrup. Fold the crepe. Cover the plate with some custard and put one or two pancakes on it. Garnish with fresh fruit.

Steps:

  • For Filling
  • Place porcini mushrooms in large bowl. Pour 2 cups hot water over; let stand 30 minutes to soften. Using slotted spoons, remove mushrooms from soaking liquid. Discard liquid. Finely chop porcini.
  • Heat oil in heavy large skillet over medium heat. Add garlic and saute 1 minute. Add porcini and parsley and saute 1 minute. Add wine and boil until liquid evaporates, about 2 minutes. Reduce heat to medium-low. Mix in button mushrooms. Cover and cook until tender, stirring occasionally, about 10 minutes. Uncover and simmer until liquid evaporates, about 3 minutes. Season with salt and pepper.
  • For Sauce
  • Melt butter in large saucepan over medium heat. Add flour and stir 3 minutes (do not brown). Gradually whisk in milk. Simmer until sauce thickens, stirring occasionally, about 5 minutes. Stir in nutmeg. Season with salt and pepper. Cool to lukewarm, about 30 minutes.
  • For Crepes
  • Whisk eggs and salt in large bowl. Gradually whisk in flour, then 1 1/4 cups milk. Strain into medium bowl. Let stand 1 hour.
  • If necessary, add more milk by tablespoons to batter to thin to consistency of heavy whipping cream. Heat 8-inch diameter nonstick skillet over medium-high head. Brush with melted butter. Pour 3 tablespoons batter into skillet and swirl to coat bottom evenly. Cook until top appears dry, loosening sides of crepe with spatula, about 45 seconds. Turn and cook until brown spots appear on second side, about 30 seconds. Turn crepe out onto plate. Repeat with remaining batter, brushing skillet with butter and stacking crepes on plate.
  • Place 8 crepes on work surface. Place 1 ham slice in center of each crepe. Spread 1 tablespoons sauce over each. Top each with 2 rounded tablespoons mushroom filling. Roll up crepe jelly roll style. Arrange rolled crepes in single layer in 13x9x2-inch glass baking dish. Spoon remaining sauce over.
  • Preheat oven to 475°F. Bake uncovered until crepes are heated through and top is golden, about 20 minutes. Sprinkle with cheese.

  • Melt butter, add shallots and saute until yellow.
  • Add flour and cook until bubbly, add half and half.
  • cook until thick and smooth.

Steps:

  • Prep: Remove stems from Arugula and chop into about 1 to 2 inch pieces.
  • Slice Bacon into thin strips.
  • In a medium sauce pan start heating the Ragu sauce low (about 2 on stove) top.
  • Add red wine (I used Casillero Del Diablo ),1/2 cup Feta, Capers and 1/2 cup Arugula let simmer for flavor to blend while preparing rest. Make sure to stir occasionally.
  • In another pan on medium heat add light amount of Olive oil, Italian Sausage(if links remove skin and take out the meat), Bacon, Garlic, Black Pepper. Sautee until Italian Sausage is cook through stirring occasionally(should look like ground beef when done)for about 10 to 15 minutes.
  • Drain the dripping from meat into the sauce that is simmering in other pan, and add 2/3 cup of meat mix, stir and raise heat to burn off the alcohol from the wine for about 5 mins then reduce to low.
  • Add the remaining Arugula to meat mixture and cook for another 5-7 minutes Or until the leaves have softened a little, add a dash of Salt, stir then reduce heat to 1.
  • Turn oven to broil and place a rack on lowest shelf.
  • While oven is warming up. start to fill the Crepes with he meat mixture, 2/3 cup of meat mixture for each 9 inch Crepe.( there will be about another 2/3 cup remaining).
  • Roll up Crepes(roll lose and gentle for the are very delicate) and place on a lightly oiled baking sheet.
  • Top with the remaining 2/3 cup of meat mixture and rest of the crumbled Feta cheese, broil for about 2-3 mins until golden brown on the top of the crepes.
  • Remove from oven and place 2 of the rolled crepes per plate and coat equal parts of the sauce over each entrée.
