TRADITIONAL CHILI WITH GROUND TURKEY
A traditional style chili that can be made with ground turkey or ground beef. I have made this recipe with ground beef and ground turkey, and they both have a similar flavor. Delicious with sweet corn bread and shredded Cheddar cheese. After the initial cooking on the stove, you can easily transfer this to a slow cooker.

Steps:
- Heat olive oil in a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the onion, green and red bell peppers, and jalapeno peppers. Cook and stir until the onion is softened and translucent, about 8 minutes. Add the garlic, cumin, chili powder, sugar, salt, black pepper, and thyme. Continue to cook until fragrant, about 8 more minutes, stirring occasionally.
- Stir in the beef broth, pinto beans, red beans, diced tomatoes, tomato sauce, and tomato paste. Bring to a boil, then reduce heat to low. Simmer until thickened, about 45 minutes, stirring occasionally. For a thinner chili, cover the pot when simmering.

THE BEST TURKEY CHILI
This is just the best tasting chili. My family prefers it over beef chili. I like to put out toppings such as chopped onion, cilantro, chopped bell pepper, cheese, and sour cream and let everyone serve themselves.

- Cook and stir the ground turkey in a large pot over medium heat until crumbly and no longer pink, about 5 minutes. Stir in the crushed tomatoes, tomato sauce, kidney beans, pinto beans, black beans, onion, garlic, and red wine. GROUND TURKEY CHILI
A healthier alternative to regular chili. This chili is economical and freezes well. I threw it together with things I already had in my kitchen after ground turkey went on sale at the store.

Steps:
- In a large pot over medium heat saute the onion, garlic and ground turkey until turkey is browned.
- Add tomatoes, pepper, cumin, chili powder, oregano, cinnamon, brown sugar and cayenne pepper.
- Saute for 5 more minutes.
- Add black beans, corn and chicken broth to the pot.
- Puree cannellini beans in a blender or food processor.
- Add puree to the pot.
- Stir well and simmer for 10 minutes.
- If the turkey mixture seems dry when browning, add a splash of olive oil.
- The spice measurements are approximate.
- If you want more or less heat, adjust the cayenne and the hot sauce.
- If desired, garnish with sour cream, shredded cheese or green onions.
GROUND TURKEY CHILI
I actually prefer using ground turkey over beef, as it makes the chili less heavy, not to mention lower in fat, although ground beef can be used if you prefer. This chili has a good zing of heat without being too hot. I like to serve it with a sprinkle of grated cheddar cheese on top and a side of cornbread. If you have leftovers, it freezes very well. Just put the leftovers into a zip top bag and thaw it out before you want to use it again.

- Heat the oil in a heavy pot over medium heat. Add the meat and stir to break up the pieces. Cook, stirring, until the meat is brown and cooked through, about 5 minutes.
- Add the onion, chile peppers, garlic, chili powder, paprika, salt, black pepper, cumin, oregano, and cayenne, and cook, stirring, until soft, about 4 minutes.
- Add the can of diced tomatoes (including juices), kidney beans, the tomato paste, sugar, and beer to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally to prevent the chili from sticking to the bottom of the pot.
- Simmer the chili for at least 30 minutes, or the chili will slightly smell/taste like beer. One hour of simmering is ideal.

TERRIFIC TURKEY CHILI
Using some fresh and some canned ingredients, this chili is a snap to throw together and will keep you craving it for days. - Heat 1 tablespoon of oil in a large stock pot over medium-high heat. Crumble turkey into the pot, stirring with a wooden spoon to break apart as much as possible. Season with taco seasoning mix, coriander, oregano, chili flakes, and tomato paste, and mix until meat is evenly coated with seasonings. Continue cooking, reducing heat if necessary, until turkey is well browned.
- Pour in beef broth, and simmer to reduce liquid slightly, about 5 minutes. Add salsa, tomatoes, and green chilies, and continue cooking at a moderate simmer for ten minutes. Adjust the thickness at any time you feel necessary by adding water.
- While chili is still cooking, heat one tablespoon of oil in a large skillet over medium-high heat. Cook onion and green bell pepper, stirring occasionally for 5 minutes, or until onion is translucent and bell pepper is lightly browned. Add onion and bell pepper to the chili, and continue cooking at a very low simmer.
- In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the zucchini, and cook stirring occasionally, for 5 minutes, or until lightly browned. Add the zucchini to the chili, reduce heat, and continue cooking 15 minutes more. Again, adjust the consistency with water as needed.
- Ladle chili into serving bowls. Top with sour cream, green onion, and cheddar cheese, and serve.

- Chop all vegetables into small pieces.
- In a large soup style pot saute all the vegetables in olive oil until soft. 15 minutes.
- Add ground turkey to sauteed vegetable and stir until well cooked.
- Stir in all seasonings; cumin, oregano, paprika, chili powder, black pepper, celery salt, kosher salt. Mix well to incorporate all the seasonings.
- Dump in tomato paste, Rotel tomatoes, and pinto beans.
- Mix all ingredients well.
- Reduce your heat to low and let simmer for 1 hour to meld all the flavors and thicken the chili. Stir often. Be sure to taste the mixture to see if it needs more salt, pepper or chili powder to your liking.
- Put chili into large bowls and garnish with shredded cheddar cheese (Tillamook), finely chopped jalapeno and fresh onion.
- Pair the chili with a local pale ale beer.

HEARTY GROUND TURKEY CHILI
DH and I enjoyed this hearty chili from Norman Kolpas' "The Chili Cookbook." While the recipe calls for masa harina, I think I would omit it next time as the chili really did not need extra thickening and I think it detracted from the flavor just a bit. Also, DH and I ate this chili in a bowl, we did not serve it over rice. It lent itself well to this method. I used baby bellas for the mushrooms. Finally, we sprinked colby jack (I think that was what I had in the fridge) shredded cheese over the top, which I think is a must. Cheddar or a mexican blend of cheeses would also be good.

- In a large saucepan, heat oil over medium heat. Add onions, garlic, paprika, chile flakes, cumin and coriander and saute 2 to 3 minutes.
- Add turkey and mushrooms, increase heat to high and saute until turkey is no longer pink, 7 to 10 minutes, stirring to break meat into rough chunks.
- Stir in remaining ingredients except masa and steamed rice.

- Discard bay leaves.

TURKEY CHILI
Rather than browning the meat first, which doesn't do much for lean ground turkey and can actually make it tough, this recipe prioritizes cooking down the vegetables first. Onions and canned tomatoes fried in olive oil provide an umami-rich flavor base for turkey's blank canvas, and the adobo sauce from canned chipotle peppers does a lot of this dish's heavy lifting. Optional toppings like shredded cheese and sour cream help cool down the spice. One of the best ways to enjoy this simple but powerful chili is over French fries with melted cheese, or tossed with some cooked spaghetti. It's so great on its own, as well.

- In a large pot or Dutch oven, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally with a wooden spoon, until translucent and starting to brown at the edges, 5 to 7 minutes.
- Use a fork to fish the tomatoes out of the can and add them to the pot, leaving behind the juice for now. Season with salt and cook the tomatoes, breaking them up with the wooden spoon and stirring occasionally, until jammy and their liquid has reduced significantly, 5 to 7 minutes.
- Stir in the chili powder and cook until fragrant, just a few seconds. Add the ground turkey, season with salt and stir to combine, breaking up the meat with the spoon. (Don't worry about browning or cooking it through here, as it will do so when it simmers.) Stir in the reserved liquid from the tomato can.
- Use the fork to fish out as many chipotle peppers from the can as you would like, starting with two or three, and add to the pot, breaking them up with the wooden spoon, along with all of the adobo sauce. The more peppers you use, the spicier your final chili will be; if you like spice, just add the entire can. (Store any peppers you don't use in an airtight container in the refrigerator for up to a week and in the freezer for up to 2 months.) Fill the empty chipotle can with cold tap water, swish it around and add to the pot. Stir to combine.
- Bring the chili to a simmer over medium-high heat - you should see occasional small bubbles breaking the surface of the mixture - then cover the pot and reduce the heat to continue simmering over medium-low, stirring occasionally, until the liquid has reduced and the tomatoes have broken down, about 20 minutes. The chili should look thick and shiny, but not too thick that you couldn't ladle it into a bowl. (If it's too watery, then simmer with the lid off for another 5 minutes, stirring occasionally.) Taste and add more salt if desired. Serve with cheese, sour cream and cilantro, if using.
GARLIC-CHILE GRILLED TURKEY THIGHS

- Pull off turkey skin and freeze in a small resealable plastic bag. (You can use the skin to make cracklings for our Shredded Kale Salad with Turkey Skin Cracklings. )
- Cut out the thigh bone from each thigh and save in another resealable plastic bag in the freezer for a future stock.
- Mash garlic to a paste with 2 teaspoons salt in a mortar and pestle or mince and mash to a paste with a heavy knife.
- Whisk together the paste with the chili powder, cumin, and olive oil and spread it all over the thighs in a baking dish. Cover the dish and marinate the thighs, chilled, at least 2 hours.
- Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas); see Grilling Procedure, below.
- Oil grill rack, then grill thighs (cover only if using a gas grill), turning once or twice, until thermometer registers 170°F, 15 to 25 minutes. Transfer to a platter and let stand 5 to 10 minutes before slicing.
- Grilling Procedure:
- Charcoal Grilling Instructions: Open vents on bottom of grill. Light a large chimney starter full of charcoal (preferably hardwood).
- For Direct-Heat Instructions: When coals are lit, dump them out across bottom rack, leaving a space free of coals on one side of grill equal to the size of the food to be grilled where food can be moved in case of any flare-ups.
- When charcoal turns grayish white (start checking coals after 15 minutes), the grill will be at its hottest and will then begin to cool off. It will be at the proper medium-hot temperature when you can hold your hand 5 inches above the grill rack (directly over the coals) for 3 to 4 seconds.
- Gas Grill Instructions: Preheat all burners on high, covered, 10 minutes, then adjust heat according to recipe.
