TASTY SESAME TILAPIA
This dish is a favorite with my family. The sesame flavor is enhanced with orange and ginger. Great served with rice and broccoli.

Steps:
- Stir the orange juice, soy sauce, sesame oil, sugar, garlic, and ginger in a 9x13 inch baking dish until combined. Add the tilapia fillets, turning once to evenly coat. Cover the dish with plastic wrap, and marinate in the refrigerator at least 30 minutes.
- Preheat an oven to 425 degrees F (220 degrees C).
- Remove the plastic wrap, and bake in the preheated oven until the fish flakes easily with a fork, 9 to 11 minutes.

CHINESE STYLE SESAME SAUCE
This is the SAUCE for Chinese restaurant style sesame chicken and broccoli. This sauce can be poured over fried chicken, or used as a dipping sauce for fried chicken. I emphasize not using too much vinegar because it turns into a sweet-n-sour type sauce. But you do need a 'touch' of vinegar.

- In a saucepan, mix together sugar and cornstarch. Stir in chicken broth, water, vinegar, soy sauce, sesame oil, chile paste, and garlic. Bring to a boil over medium heat, stirring constantly. Reduce heat, and simmer 5 minutes.

SOY-SESAME DIPPING SAUCE
This soy sauce- and sesame-flavored dip is great for egg rolls, fresh or fried spring rolls, grilled meats, or poultry. Chill or heat before serving. This is also a great dressing for coleslaw -- just toss the slaw with the dressing and chill for up to 3 days. TOASTED SESAME SAUCE
Adapted from Vegetarian Planet, this is so good served with noodles, as a dip for raw vegetables, or as a sauce for noodles or ravioli.

Steps:
- Preheat the oven to 350* F.
- Toast sesame seeds on a baking sheet 10-15 minutes, until most of the seeds turn a rich brown(watch carefully so as not to burn).
- Let cool.
- In a spice grinder(or coffee grinder) or food processor, grind about half the sesames seeds in a batches.
- Combine the ground and whole sesame seeds in a bowl.
- Add remaining ingredients, and whisk well.
- Put the sauce into a jar and seal it.
- Let the sauce sit for 1 hour while flavors mix.
- You can store sauce in the fridge for up to 2 weeks.
- Enjoy!

SOBA IN TOASTED SESAME SEED SAUCE
Popular in Japan, Soba noodles are made of buckwheat and offer a nice change of pace from other pastas. Though this dish is usually made with Chinese black vinegar, I've used balsamic vinegar with good results. One could include some thinly shaved slices of poached chicken or julienned strips of tofu if desired. You can also vary the vegetables -- in my picture I used a combination of broccoli and carrots. - Preheat the oven to 375°F.
- Pour the sesame seeds onto a rimmed baking sheet. Toast the seeds in the oven for 12 to 15 minutes, until they are a rich brown around the edges.
- Meanwhile, bring a large pot of salted water to a boil. Add the noodles and cook them for 4 to 6 minutes, or until they are just tender. (Check the package for best cooking time as it will vary by the thickness of your noodles.) Drain them, rinse them well with cold water, and drain them again.
- In a large mixing bowl, mix together the vinegar, sugar, soy sauce, garlic, sesame oil and green onions. Add the noodles, and the toasted sesame seeds. Toss well, then stir in the broccoli.
- Let the dish sit for 20 minutes at room temperature before serving.
