TOFU IN A MILD ORIENTAL SAUCE

This is a revision of a recipe I got from a grocery store. The original recipe was a little too spicy for me. The sample I tasted made my mouth hot! This is a milder version of that recipe. It is quite tasty. If you don't want it real saucy, cut the sauce ingredients down. Prep time and cook time is approximate. I have also submitted the spicier version of this recipe.

Tofu in a Mild Oriental Sauce image

Steps:

  • Cut the tofu into 1/2 inch cubes and set aside.
  • Mix the black bean garlic sauce, soy sauce and sesame oil together in a small bowl and set aside.
  • Place a skillet or wok over high heat and heat until hot.
  • Add the olive oil, swirling to cover bottom and sides of skillet or wok.
  • Add the sauce mixture and cook, for 1 to 2 minutes.
  • Add the tofu.
  • Stir gently and cook until tofu is heated through and covered with the sauce.

1 (14 ounce) package soft tofu or 1 (14 ounce) package regular tofu
2 tablespoons black bean garlic sauce
2 teaspoons soy sauce
2 teaspoons dark sesame oil
2 tablespoons olive oil
3 tablespoons garlic, minced

Panfried Tofu with Asian Caramel Sauce image

Steps:

  • Drain tofu and fry shallots:
  • Halve tofu crosswise, then cut lengthwise into fourths to form 8 slices. Put tofu slices between several layers of paper towels to drain, replacing towels as needed, until ready to use.
  • Finely chop enough shallots to measure 1/2 cup and reserve. Cut remaining shallots crosswise into 1/8-inch-thick slices and separate into rings. Heat oil in a 10-inch heavy skillet (preferably cast-iron) over moderately high heat until hot but not smoking, then fry sliced shallots in 2 batches, stirring occasionally, until golden brown, 1 1/2 to 3 minutes per batch (watch closely, as shallots can burn easily). Quickly transfer shallots as fried with a slotted spoon to paper towels to drain. Pour off all but 1 tablespoon oil from skillet and reserve skillet.
  • Make sauce:
  • Cook sugar in a dry 1- to 1 1/2-quart heavy saucepan over moderate heat, undisturbed, until it melts around edges and begins to turn golden, then continue to cook, stirring, until all of sugar is melted and turns a golden caramel.
  • Add reserved chopped shallots (use caution; caramel will bubble up and steam vigorously) and cook, stirring, until shallots shrink and are very fragrant, about 45 seconds. Add garlic and ginger and cook, stirring, 30 seconds. Stir in soy sauce, vinegar, and 1 1/3 cups water and simmer, stirring, until any hardened caramel is dissolved, about 1 minute.
  • Stir together cornstarch and remaining 2 tablespoons water until smooth, then stir into sauce and simmer, stirring occasionally, 2 minutes. Remove from heat and keep warm, covered.
  • Panfry tofu:
  • Heat oil remaining in skillet over high heat until hot but not smoking. Meanwhile, blot any excess moisture remaining on tofu with paper towels, then add to hot oil in skillet in 1 layer. Fry tofu, turning over once, until golden and crisp, 7 to 10 minutes total. Transfer to clean paper towels to drain briefly.
  • Reheat sauce, then serve tofu topped with sauce, basil, mint, and fried shallots.

1 (14-ounce) block extra-firm tofu, rinsed
1/2 pound shallots (4 to 5 large)
1 cup vegetable oil
1/3 cup sugar
1 garlic clove, finely chopped
1/2 tablespoon finely chopped peeled fresh ginger
3 tablespoons soy sauce
3 tablespoons rice vinegar (not seasoned)
1 1/3 cups plus 2 tablespoons water
2 tablespoons cornstarch
1/3 cup loosely packed fresh basil leaves

MAPO TOFU WITH CHINESE BLACK BEANS SICHUAN STYLE

Tofu (Japanese name for Bean Curd (Chinese name Dou Fo) is high in protein, inexpensive and blends very well with many foods. There are different variations of tofu from the cuisines of Korea, Japan and China. Plus each country has variations such as silken (very soft), soft, medium or firm tofu. I recommend using a medium or firm tofu and a Sichuan Spicy Noodle Sauce for this tasty dish. This dish can be very spicy or mild according to your personal taste� see notes below.

Mapo Tofu With Chinese Black Beans Sichuan Style image

Steps:

  • PREPARATION.
  • Rinse briefly the salted black beans in water to remove some of the salt and then add 2 or more tablespoons rice wine and soak for 15 minutes, set aside.
  • Add grated ginger to the salted black beans.
  • In a bowl add the ground meat and 1 tablespoon soya sauce and mix, set aside.
  • In a measuring cup add 1/2 to 3/4 cup stock, oyster sauce, Amoy Sichuan Spicy Noodle Sauce, garlic, chili paste with garlic, sugar, chili peppers, set aside.
  • Cut up the tofu into bite size cubes, set aside.
  • In a cup add 3 tablespoons tapioca starch, 4 tablespoons stock, mix to create a watery mixture, set aside.
  • COOKING DIRECTIONS.
  • In a wok (or Teflon pan) add the peanut oil and when hot add the salted black bean mixture, stir for 1 minute.
  • Add the ground pork (or other meat) and stir to break up the pieces for about 1 minute.
  • Next add the stock mixture, stir and bring to a boil.
  • Add the tofu and gently toss (try not to break up the tofu), cover and let cook for 2 or more minutes, remove the cover and gently toss again, cover and let cook for 1 more minutes.
  • Mix the tapioca starch and stock, remove the cover and then add ½ of the mixture and at the same time stir gently until the sauce becomes thick (add more of the tapioca mixture as needed).
  • Add the scallions and sesame oil, briefly toss gently� now you are almost finished.
  • In individual plates add some white rice and the black bean & tofu sauce on the side or on top.
  • Enjoy.
  • NOTES:.
  • You can substitute ingredients like using sweet oyster sauce or eliminating the salted black beans and also reducing a little of the spicy ingredients for a milder dish.
  • The photo shows that I used scotch bonnet peppers which are extremely hot, so substitute other types to your liking.
  • You can use the soft tofu, but it will break down more easily when stirring and also release more liquid as well.
  • If you add to much stock (1/2 to 3/4 is good) or the softer types of tofu the sauce will become to thinner� and you will then need to add more of the tapioca starch mixture for a thicker sauce.
  • The Amoy Sichuan Spicy Noodle Sauce (fermented salted soybean, chili, garlic) is a great ingredient for this spicy dish or use other types of sauce found on Asian food store shelves.
