TOFU STIR-FRY WITH PEANUT SAUCE (VEGAN)

This is a throwback recipe from when I was a hardcore vegan, but it's still one of my staples years later. It's healthy, filling, and full of flavor!

Tofu Stir-Fry with Peanut Sauce (Vegan) image

Steps:

  • Whisk coconut milk, peanut butter, soy sauce, brown sugar, lime juice, sriracha sauce, and ground chile powder in a bowl until a smooth sauce forms.
  • Heat oil in a large skillet over medium-high heat. Add carrots and red bell pepper; saute until just tender, 1 to 2 minutes. Add tofu; saute until lightly browned, about 4 minutes per side. Add garlic and ginger; cook and stir until fragrant, about 30 seconds.
  • Pour sauce into the skillet; stir to coat tofu, carrots, and bell pepper. Cook until flavors combine, about 5 minutes. Reduce heat to low; stir in spinach 1 cup at a time until wilted. Serve over brown rice.

¼ cup peanut butter
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon lime juice
1 teaspoon sriracha sauce
½ teaspoon ground chile pepper
1 tablespoon olive oil
2 carrots, diced
1 red bell pepper, diced
1 (14 ounce) package firm tofu, drained and cut into 1-inch cubes
4 garlic cloves, minced
2 tablespoons minced fresh ginger
4 cups baby spinach
1 ½ cups cooked brown rice

Tofu Stir-Fry in Spicy Peanut Sauce image

Steps:

  • Mix first 4 ingredients until blended.
  • Heat 1 Tbsp. oil in large skillet on medium-high heat. Add tofu; cook and stir 5 to 6 min. or until golden brown. Remove from skillet; set aside.
  • Heat remaining oil in same skillet. Add onions, garlic, ginger and crushed pepper; cook and stir 1 min. Add bell peppers; cook and stir 4 to 5 min. or until crisp-tender. Return tofu to skillet along with the dressing mixture; stir. Bring to boil; cook and stir 2 to 3 min. or until sauce is thickened.

2 green onions, cut into 1-inch lengths
4 cloves garlic, minced
1 Tbsp. minced fresh ginger
1/4 tsp. crushed red pepper
1 each red and yellow bell pepper, cut into 1-inch pieces

  • Wrap the tofu in a towel and gently squeeze out the water. Dice into 1-inch cubes. Put the cubes in a container with a lid. Drizzle the soy sauce over the tofu, then cover and shake until well coated. Add the garlic powder and starch, then cover and shake again.
  • Put a nonstick pan over medium-high heat. Pour in 2 teaspoons of oil. Cook the tofu until browned on all sides, about 3 to 4 minutes, turning occasionally. Remove the tofu when it’s done and place the pan back over the heat.
  • Add the cauliflower to the pan, along with the remaining 1 teaspoon of oil. While it cooks, mince the garlic. Add the white onion to the pan. Stir and cook until the onion is soft, about 3 to 4 minutes.
  • Add the asparagus, bell pepper, and garlic to the pan. Cook and stir until the vegetables are tender with a bit of crunch, about 5 to 7 more minutes.

  • Coat a large nonstick skillet (or wok) with cooking spray; set over high heat. When pan is hot, add tofu; cook until browned, about 3 to 5 minutes per side. Remove tofu from pan and slice into thick strips; set aside.
  • Add pepper and snap peas to same skillet (or wok) and sprinkle with salt; stir-fry for 5 minutes. Add cabbage, carrot and reserved peanut sauce; toss to coat and stir-fry until cabbage wilts, about 1 to 2 minutes (if the sauce appears too thick, stir in some additional water). Add seared tofu and scallions; stir to coat and cook until heated through. Garnish with sesame seeds and serve. Yields about 1 1/2 cups per serving.
