This is an interesting tomato free salsa I found in the 'World Cafe 2' cookbook which celebrates vegetarian recipes from around the world.

- Put the tomatoes, cilantro, garlic, olive oil, orange juice, and red pepper flakes in a food processor. Pulse until the ingredients are combined but still chunky. Season with salt and pepper, to taste. Transfer to a small bowl and serve with tortilla chips.

My Guatemalan sister-in-law taught me how to make this rice. In Guatemala, it is served with almost any meal, and is accompanied by black beans, salsa, and corn tortillas.

Steps:
- Heat oil in a large skillet over medium-high heat. Add rice, onion, and tomato; cook and stir until rice turns light golden brown, 3 to 4 minutes.
- Stir water, carrot, celery, and chicken bouillon into the skillet. Simmer until most of the water is absorbed, about 8 minutes. Cover and simmer until rice is tender, 5 to 8 minutes more.

CHICKEN SKEWERS WITH CHIRMOL SALSA
Chirmol, a Guatemalan grilled tomato salsa, means "smashed tomatoes". A nice accompaniment is quick-cooking rice prepared with diced summer squash and grated lemon zest. From Woman's Day, June 20 2006.

Steps:
- For the skewers: Heat outdoor grill. Mix ingredients in a plastic food bag and seal. Marinate for 15 minutes. Have ready 8 skewers.
- For the salsa: Coat tomatoes with nonstick spray. Grill, turning, for 5 minutes or until the skins are charred. Remove to a bowl; mash until almost smooth. Stir in rest of ingredients.
- Thread chick on skewers. Coat with nonstick spray. Grill 4 minutes, turning once, or until lightly charred and cooked through. Serve with salsa.
TOMATO SALSA (GUATEMALAN STYLE)
Steps:
- Preparation time: 2 minutes. Cooking time 10-15 minutes. While meat is marinating, broil the tomatoes on the grill until the skin is dark and the tomatoes are soft, then remove them from the grill, in a bowl smash the tomatoes, and then add all ingredients to it, mix and test for salt and pepper.
