Steps:

  • Preheat the oven to 375 degrees F. Line 2 heavy large baking sheets with aluminum foil. Whisk the oil, oregano, and pepper in a small saucepan over medium heat just until warm. Set aside for 15 minutes. Brush the oil mixture over both sides of the tortillas. Stack the tortillas and cut them into 1/2 to 3/4-inch wide strips. Arrange the strips in a single layer over the baking sheets. Sprinkle the cheese and salt over the strips. Bake until the strips are golden brown and crisp, about 12 minutes. Do-Ahead Tip: The tortilla strips can be made up to 2 days ahead. Store in airtight containers and keep at room temperature.

Steps:

  • The dough. If using masa harina, mix it with the hot water, then knead until smooth, adding more water or more masa harina to achieve a very soft (but not sticky) consistency; cover with plastic and let rest 30 minutes. When you're ready to bake the tortillas, readjust the consistency of the fresh or reconstituted masa, then divide into 15 balls and cover with plastic. Heat a large, ungreased, heavy griddle or 2 heavy skillets: one end of the griddle (or one skillet) over medium-low, the other end (or the other skillet) over medium to medium-high. Cut 2 squares of heavy plastic to fit the plates of your tortillas press. With the press open, place a square of plastic over the bottom plate, set a ball of dough in the center, cover with the second square of plastic, and gently flatten the dough between. Close the top plate and press down gently but firmly with the handle. Open, turn the tortilla 180 degrees, close and gently press again, to an even 1/16-inch thickness. Open the press and peel off the top sheet of plastic. Flip the tortillas onto one hand, dough side down, then starting at one corner, gently peel off the remaining sheet of the plastic. Lay the tortilla onto the cooler end of the griddle (or the cooler skillet). In a about 20 seconds, when the tortilla loosens itself from the griddle (but the edges have not yet dried or curled), flip it over onto the hotter end of the griddle (or onto the hotter skillet). When lightly browned in spots underneath, 20 to 30 seconds more, flip a second time, back onto the side that was originally down. If the fire is properly hot, the tortilla will balloon up like a pita bread, When lightly browned, another 20 or 30 seconds, remove from the griddle (it will completely deflate) and wrap in a towel. Press, unmold and bake the remaining balls of masa, placing each hot tortilla on top of the last and keeping the stack well wrapped. Resting. Let the wrapped stack of tortillas rest for about 15 minutes to finish their cooking, soften and become pliable.

1 pound fresh masa for tortillas, store bought of homemade or 1 3/4 cups masa harina mixed with 1 cup plus 2 tablespoons hot tap water

  • Preheat oven to 375 F.
  • Spray a 2-1/2 quart or an 11X7X2 baking dish with Pam cooking spray; set aside.
  • In a large bowl, combine chicken, 1 cup cheese, soups, rotel, green chilis and 3/4 cup green onions; blend well.
  • Set aside 12 tortilla wedges.
  • Mix remaining tortilla wedges into chicken mixture; spoon mixture into baking dish.

  • Put flour, salt, and baking powder into a mixing bowl.
  • Mix the shortening or oil into the flour mixture until it forms pea-size balls.
  • Add the lukewarm water, a little at a time, until the dough is soft and pliable.
  • On a floured surface, knead the dough until smooth, for 1 to 2 minutes.
  • Place in a bowl, cover with a clean dish towel, and let it"rest" for 30 minutes.
  • Knead dough and form 8 to 10 balls.

  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato sauce, chilies and taco seasoning; mix well. Steps:

  • Use a large non stick pan for the first part of preparation and a 9" non stick pan for the final preparation.
  • In large pan, layer potato, onion slices, olive oil and coarse salt to taste.
  • Cook over medium heat, lifting and turning the potatoes/onion occasionally, until they are tender but not brown.
  • Don't be afraid if they brown a little, you want them to be cooked.
  • The potatoes will remain separated, not in a "cake".
  • Meanwhile, in a large bowl beat the eggs with a fork until they are slightly foamy.
  • Let stand until potatoes are done.
  • Remove the potatoes from the skillet and drain them in a colander, reserving about 3 tablespoons of the oil.
  • Add the drained potato/onions to the beaten eggs while the potatoes are still hot.
  • Press the potatoes down into the eggs so they are completely covered.
  • Let mixture stand for 15 minutes.
  • Heat two tablespoons of the reserved oil in the 9" pan.
  • Add the potato/egg mixture to the pan rapidly spreading evenly with a pancake turner.
  • Move the pan around and shake once in a while to evenly brown the mixture and keep it from sticking.
  • You can use the edge of the pancake turner (or a fork) as the mixture sets to form the sides to a more vertical orientation away from the sides of the pan.
  • Once the mixture is brown (this is the tricky part) place a large plate upside down over the pan.
  • Turn the pan upside down, add a little more of the reserved oil, then slide the uncooked side of the potato/eggs back into the pan.
  • Continue cooking until browned.
  • Flipping the tortilla two or three more times will help give it shape.
  • Once cooked, allow to cool several hours and enjoy!
  • Cut into one inch pieces and serve as appetizer with toothpicks.

Steps:

  • Combine the flour, vegetable oil and salt in a bowl. Pour over 150ml warm water and knead to bring the mixture together. Remove from the bowl and knead on a lightly floured work surface for around 5 mins until you make a soft, smooth ball of dough. Cover with a clean tea towel and rest for at least 15 mins before rolling out.
  • Cut the dough into 6 equal pieces (about 75g each). Roll out each ball of dough as thinly as possible on a floured work surface. They should make rounds about 20 cm wide, 2mm thick.
  • Heat a large frying pan over a medium-high heat. Cook the tortillas for 1-2 mins on each side until golden brown and toasted. Wrap them in foil and cover in a tea towel to keep warm, while you cook the rest. Keeps for two days well wrapped, or cool, wrap and freeze for up to three months.

Steps:

  • Place potatoes in a medium saucepan, cover with water by 2 inches, and add 1 tablespoon salt. Bring to a boil, then reduce heat and simmer, partially covered, until just tender, about 25 minutes. Drain. Let cool slightly, then peel with a paring knife. Cut into 1/2-inch-thick slices.
  • Heat 3 tablespoons oil in a 10-inch nonstick skillet over medium. Add onion and 1 teaspoon salt; cook, stirring occasionally, until translucent, about 5 minutes. Add potatoes and cook, stirring, 5 minutes more. Transfer to a bowl. Let cool 5 minutes.
  • Whisk eggs with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add to potato mixture and let stand, stirring occasionally, 10 minutes.
  • Clean skillet and add 2 tablespoons oil; heat over medium. Add egg-potato mixture; cook 2 minutes. Reduce heat to low; cook, pulling cooked egg away from sides with a rubber spatula to let raw egg flow underneath, until bottom is set and just pale golden, and top is almost set, 4 to 5 minutes more. Remove from heat.
  • Place a heatproof plate (with a diameter larger than skillet's) upside-down over skillet. With hot pads, very carefully turn skillet and plate at the same time to invert tortilla onto plate. Add remaining 1 tablespoon oil to empty skillet; swirl to coat.
  • Slide tortilla, uncooked-side down, back into skillet. (Tuck in any potatoes that slip out.) Cook over low heat, pressing down with spatula and tucking in edges to shape rounded sides, until cooked through, 4 to 6 minutes. Slide onto a cutting board. Let cool about 20 minutes, then serve, warm or at room temperature, cut into wedges.

Steps:

  • Whisk flour, salt, and baking powder together in a large bowl. Add vegetable shortening and work into flour mixture using a pastry cutter until it resembles coarse crumbs.
  • Form a well in the middle of flour mixture and mix in hot water. Work flour and water mixture together with a fork and transfer to a cutting board.
  • Knead until a smooth, soft dough is formed, about 3 minutes. Add more flour if dough is too sticky.
  • Place more flour on cutting board, cover dough with bowl, and let rest for 15 minutes.
  • Cut ball of dough into eight equal parts and cover until needed.
  • Roll out balls of dough either by hand or with a tortilla press.
  • Heat a large skillet over medium-high heat. Place flattened tortilla in skillet and cook until it begins to bubble, about 1 minute. Flip tortilla over and cook for an additional minute. Flip again and cook for 1 more minute. Repeat with remaining dough.

KAMUSH (MEXICAN TORTILLA APPETIZERS)

This is my rendition of the Kamush that was our favorite appetizer at our favorite local Mexican restaurant, "La Chosa". When it closed, I went into severe withdrawal until I came up with this recipe. The refried beans, cheese, guacamole and sour cream are a must for me, after that, you can personalize. This is great for a crowd, for Superbowl, football games in general or just have it for breakfast! Prep and cook times are very approximate due to personal preference and the fact that I'm usually having a few beers when I fix this and it takes longer.

Kamush (Mexican tortilla appetizers) image

Steps:

  • If using the fresh corn tortillas, cut each into 4 quarters and in a 10-inch skillet over medium-high heat in about 1/4 inch of hot salad oil, cook tortilla wedges, about 4 at a time, for 30 seconds.
  • With a slotted spoon, turn the'chips' and cook 30 seconds longer or until golden and crisp.
  • Remove; drain on paper towels and place in a single layer on a large cookie sheet (or several sheets).
  • If using store bought restaurant style chips*, place them in an even layer on the cookie sheet.
  • Heat refried beans in a sauce pan and when they're nice and creamy, shmear a tablespoon or so onto each chip, then sprinkle with a dollop of cheese.
  • Place into a 350° oven until cheese is melted and just beginning to get bubbly, watch carefully, about 10 minutes.
  • Remove from oven, and decorate!
  • Use what you want, I like to place some guacamole on top, then top with a small dollop of sour cream, 3-4 tomato dices with a jalapeno slice right in the middle.
  • You can also add some habanero salsa at this point-it's very flexible, decorate to taste.
  • *ifusing store bought chips, which work perfectly well in this recipe, try to buy some that are large and flat and don't let the bag-packer smush your bag of chips!

Authentic Mexican Tortillas image

Steps:

  • Combine the flour, baking powder, and salt. Either by hand or with a pastry cutter, cut in the shortening till the mixture is crumbly. If the mixture looks more floury than crumbly, be sure to add just one or two more tablespoons of shortening till it is crumbly. Add about 3/4 cup hot water to the mixture, or just enough to make the ingredients look moist.
  • With your hand or a large fork, knead the mixture making sure to rub the dough against the sides of the large mixing bowl to gather any clinging dough. If the dough still sticks to the side of the bowl, add a couple more tablespoons of flour until the dough forms a soft round shape. The dough is ready to roll out now, but it is best to let it rest. Cover it with a dish towel, and let it sit for about an hour or so.
  • Take the dough, and pull it apart into 10 to 12 balls. Lightly flour your rolling area, and roll each ball with a rolling pin to about 1/8 inch thickness.
  • Place each tortilla on a medium hot cast iron skillet. Cook for about 1 to 2 minutes on each side, or until the tortilla does not look doughy.
