OLD-FASHIONED BAKED BEANS

Old-Fashioned Baked Beans image

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

  • Preheat oven to 325°. In a large bowl, mix all ingredients. Transfer to a greased 3-qt. baking dish. Bake, uncovered, 1-1/4 to 1-1/2 hours or until bubbly.

APPALACHIAN CIDER BAKED BEANS

The best baked beans I ever made, the cider adds a wonderful fruitiness. From "Cider Beans, Wild Greens, and Dandelion Jelly", by Andrews McMeel, 2010, via Leite's Culinaria. Not having salt pork the first time I made these, I used thick-cut bacon on top and a smoked ham hock buried in the center. Still tasted yummy. Soaking time is not included as prep time.

Appalachian Cider Baked Beans image

Steps:

  • Pick over the beans, discarding any stones and wrinkled beans. Rinse well and place in a large bowl. Add cold water to cover by 3 inches, cover, and let soak for 12 hours.
  • Drain the beans and transfer them to a heavy saucepan. Add the cider and slowly bring the beans to a boil over medium heat. Gently boil, uncovered, for about 30 minutes. Remove from the heat and drain the beans, reserving the cooking liquid.
  • Preheat the oven to 300°F (149°C).
  • Layer half of the salt pork slices on the bottom of a 2-quart ceramic bean pot or other deep baking dish, such as a Dutch oven. Spoon the beans into the pot and then bury the onions in the beans.
  • In a small saucepan, combine the molasses, dry mustard, and salt and place over medium heat until the mustard and salt dissolve into the molasses. Pour the mixture evenly over the beans and top with the remaining salt pork slices. Add the reserved cooking liquid to the pot. Add hot water as needed to cover the beans with liquid. Cover the pot.
  • Bake for 4 hours, then uncover the pot and add more water (or cider) if the beans seem dry. Recover and continue to bake for 1 to 2 hours, until the beans are tender. Serve hot, directly from the bean pot.

Old Fashioned Baked Beans image

Steps:

  • Soak beans overnight, well covered with cold water.
  • Pour off soaking water and pick over beans to remove any bad ones, or debris.
  • Put beans in a pot.
  • Cover with fresh cold water and add 1 tsp. baking soda.
  • Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
  • Cut onion in quarters and put in bottom of a bean crock or large casserole.
  • Add the partially cooked beans.
  • Put cut up salt pork on top.
  • (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
  • Pour over the beans.
  • Add more boiling water, if needed, to come just to the top of the beans.
  • Also, if needed during baking tme, add more boiling water.
  • Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.

2 lbs yellow-eyed beans

DURGIN PARK BAKED BEANS

Back in the 80's I was in Boston and decided to eat at a restaurant called Durgin Park. Not knowing it was a legend and that the wait staff was noted for their unusual service. I loved the baked beans so much that I planned several trips later on just to eat at Durgin Park. Several years ago I stumbled across this recipe on CopyKat Recipes and have been using it ever since. No need to travel to Boston anymore. The original recipe is baked in the oven, I adapted mine to do in a crock pot (cut the ingredients in half). I have included directions for both. The result is not the traditional baked bean with a thick sauce, but Durgin Park is not a traditional restaurant. The sauce is very thin, but oh so good. Hope you enjoy.

Durgin Park Baked Beans image

Steps:

  • FOR BOTH VERSIONS, soak the beans overnight in water.
  • Drain, rinse and put beans in a large stockpot.
  • Add enough water to cover beans along with the baking soda.
  • Bring to boil.
  • Reduce heat and simmer for 10 minutes.
  • Drain beans and rinse.
  • OVEN VERSION, preheat the oven to 300 degrees.
  • Place the onion in the bottom of a 3 quart ovenproof casserole.
  • Add half the bacon, add the beans and top with remaining bacon.
  • Mix the sugar, molasses, mustard, salt and pepper together.
  • Pour over the beans.
  • Add just enough water to barely cover.
  • DO NOT stir.
  • Cover and bake for six hours (you may need to add a little water but be careful not to get the beans too wet).
  • CROCKPOT VERSION, to fit into a 2 1/2 quart Crockpot cut ingredients in half.
  • Place the onion in the bottom of the Crockpot.
  • Follow with half the bacon, all the beans and the remaining bacon.
  • Mix the sugar, molasses, mustard, salt and pepper together.
  • Pour over the beans.
  • Add just enough water to barely cover.
  • DO NOT stir.
  • Cover and bake for 7- 8 hours (you may need to add a little water but be careful not to get the beans too wet).

  • Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
  • In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up.   • SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.
