Steps:

  • In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
  • Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
  • Serve immediately garnished with a sprig of fresh mint.

2 cups nonfat vanilla yogurt (recommended: Dannon Lite and Fit)
2 teaspoons lime juice
1 pinch cayenne pepper
1 (15.25-ounce) can tropical fruit salad, drained (recommended: Dole)

  • In a bowl, whisk the milk, extract and pudding mix for 2 minutes. Stir in coconut and lime zest if desired. In each of two 1-1/2-cup parfait glasses or dessert dishes, layer about 1/3 cup pudding mixture, 1/4 cup pineapple, 2 tablespoons almonds, 1/3 cup pudding mixture, 1/4 cup strawberries, 2 tablespoons almonds and remaining pudding mixture., Top with whipped cream. Steps:

  • Melt butter in heavy small saucepan over medium-high heat. Whisk in brown sugar and cream; bring to boil. Add lime juice, lime peel and salt. Boil until sauce is reduced to 3/4 cup, whisking occasionally, about 2 minutes. Set caramel-lime sauce aside.
  • Place 1/3 cup sorbet in each of 4 parfait glasses or wineglasses. Top sorbet with 1/4 cup pineapple, 1/4 cup mango, 2 tablespoons coconut, 2 tablespoons sauce and 1/3 cup ice cream. Sprinkle each parfait with 1 tablespoon coconut and drizzle with 1 tablespoon sauce. Serve immediately.

  • Stir 1 cup boiling water into each flavor dry gelatin mix in separate medium bowls at least 2 min. until completely dissolved. Stir 1 cup of the cold juice into gelatin in each bowl. (Do not add cold water.)
  • Pour each flavor gelatin into separate 8- or 9-inch square pan. Refrigerate 4 hours or until firm. (Gelatin no longer sticks to your finger when touched.) Cut into 1-inch squares, being careful to cut all of the way through gelatin to bottom of each pan.

Steps:

  • Preheat oven to 375. Spread coconut on a baking sheet. Bake until toasty brown, 3 to 5 minutes. (Watch carefully so it doesn't burn!).
  • Peel bananas, cut into 1/4-in. thick slices, and put slices in a bowl. Finely shred zest from the lime over the banana slices. Juice the lime and toss juice with banana slices.
  • Divide 1/2 the banana slices among four parfait glasses or small glass bowls,lifting bananas out of the lime juice with a fork or slotted spoon. Top bananas in each glass with 1/4 Cup sorbet and sprinkle with 1 T. coconut. Repeat to make a second layer in each parfait. Serve immediately.
