HEALTHY GRANOLA

We decided to give granola a makeover, and not just by cutting calories and sweeteners. Yes, we trimmed the sugar-but we also added healthy fats, like olive oil, and increased the fiber by including with almonds, sesame seeds and puffed millet. One 1/2-cup serving delivers 4 grams of fiber and only 8 grams of sugar! Add some milk (for calcium and protein) and your favorite dried or fresh fruit and you've got a complete breakfast or snack.

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 325 degrees F.
  • Toss together the oats, millet, almonds, coconut flakes, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl.
  • Whisk together the olive oil, brown sugar, maple syrup, vanilla and 3/4 teaspoon salt together in a small bowl.
  • Pour the olive oil mixture into the oat mixture and toss until evenly coated. Spread out on a rimmed baking sheet and bake until golden and toasted, tossing the mixture around about halfway through, 30 to 40 minutes. Let cool completely on the baking sheet, then store at room temperature in an airtight container for up to 1 week.

TRULY HEALTHY GRANOLA

Granola is inherently thought of as "health food" but when you flip over the bag and read the nutritional info, it can actually be very high in calories. This is my slimmed-down version. I use sugar-free maple syrup since that's all I keep in the house, but regular maple syrup would work perfectly fine. Sprinkle the finished product on ice cream, fresh fruit or yogurt.

Truly Healthy Granola image

Steps:

  • Preheat oven to 350 degrees.
  • In a small saucepan, heat the juice, honey and maple syrup over medium heat until you can stir the mixture easily, but before it starts to boil. About 5 minutes.
  • Place the oats in a large mixing bowl. Pour the honey mixture over the oats and stir quickly to coat.
  • Spread the oats in an even layer on a baking sheet. Bake until the granola is crisp and starts to brown. About 15 minutes. Watch it carefully, or the granola may burn.
  • Place the baking sheet on a cooling rack and while the granola is still warm, toss in the pecans and dried fruit. Sprinkle with cinnamon and finish cooling on the baking sheet.
  • Store in an airtight container.

Basic Healthy Granola image

Steps:

  • Preheat oven to 325 degrees. Lightly grease baking sheet with canola oil (you may also use cooking-oil spray or line baking sheet with nonstick foil). In a medium bowl, combine the oats, flax meal, cinnamon, and salt. Mix well. In a small bowl, combine the apple juice, maple syrup, honey, and optional brown sugar. Mix well.
  • Add the wet ingredients to the dry ingredients, stirring until the mixture is fully combined and moist. Spread the mixture on the greased baking sheet and bake for 15 minutes.
  • Remove from the oven and stir, breaking the large chunks into smaller pieces. Bake for an additional 8 minutes or until crisp. Remove from oven and allow to cool. While still warm, stir to break up any remaining chunks. When completely cool, store the granola in an airtight container.

Steps:

  • Preheat oven to 350.
  • Put oats in a microwaveable bowl and cook for two minutes, stirring after one. (This warms the oats helping to melt all the ingredients together).
  • Add remaining ingredients, except the dried fruit, and stir until very well blended.
  • Pour mixture into two large oven safe dishes and bake for 20 minutes, stirring every five.
  • Add dried fruit.
  • Spread on wax paper to cool.

Steps:

  • Preheat oven to 300 degrees.
  • In a large bowl combine oats, wheat germ, flax seed, coconut, sesame seeds and nuts, mixing well.
  • In a large saucepan, combine the brown sugar substitute or brown sugar, water, oil, honey, sorghum, salt, cinnamon and vanilla.
  • Heat until thoroughly mixed; do not boil.
  • Pour the syrup over dry ingredients and stir until coated well.
  • Spread into five 13 x 9 inch jelly roll pans.
  • Bake 20 to 30 minutes, stirring occasionally.
  • For a crunchier texture, bake an additional 10 to 15 minutes.
  • Cool mixture and add dried fruit.
  • Store in airtight container in a cool dry place.
  • Will keep up to 6 months; but it doens't make it that long in our house.
