MASHED POTATO TOPPED GREEN BEAN CASSEROLE
Combines two favorites - green bean casserole and mashed potatoes into one! A favorite for the holidays!

Steps:
- Preheat oven to 350°F. Mix soup and milk, then add pepper and green beans. Stir in cup French fried onions. Pour into a 1 1/2 quart casserole. Bake for 30 minutes or until hot. Remove from oven and stir casserole. Top with prepared mashed potatoes. Adjust oven to broil. Toast potatoes under broiler until lightly brown, about 2 minutes. Top with remaining French-fried onions and serve.
TUNA AND GREEN BEAN CASSEROLE TOPPED WITH MASHED POTATOES
This is one of my comfort foods. It is really good. My grandmother used to make this during Lent. She is catholic. On Fridays during Lent, you are supposed to avoid eating meat. It is a quick, inexpensive meal to serve. My husband devours this casserole. Enjoy!

Steps:
- Peel 6 large potatoes.
- Cut into about 1 1/2 inch cubes.
- Rinse the potatoes and place in a pan.
- Put enough water in the pan to cover potatoes.
- Add a little to the water.
- Bring to a boil.
- You can turn heat down a little.
- Continue to boil for 15-20 minutes.
- Potatoes should be tender when you poke them with a fork.
- Make sure they are tender (otherwise you will have crunchy lumps when you mash them).
- Drain the water from them pan.
- Add 1 stick of margarine.
- Add salt and pepper to taste.
- Add a splash of milk.
- Use and electric mixer to mash.
- If you want potatoes a little creamier, add another small splash of milk (warning -- to much milk and they get soupy).
- Set aside potatoes.
- In a 9 x 13 greased baking dish, add drained albacore tuna, green beans and cream of mushroom soup.
- I like to cut the green beans in half.
- Sprinkle salt, pepper and Lawry's Seasoning; mix well.
- Spread this out evenly on the bottom of the baking dish.
- Spread the mashed potatoes on top of the the tuna mixture.
- Bake in a 350°F oven on the middle rack for 30 to 35 minutes.
- Serve immediately.

- Cook the green beans in a large pot of boiling water until crisp-tender, stirring occasionally, about 4 minutes. Using a mesh strainer, transfer the green beans to a large bowl of ice water to cool completely. Drain the green beans and pat dry with a towel.
- Add 2 teaspoons of salt to the same cooking liquid and bring the liquid to a simmer. Add the potatoes to the simmering liquid and cook until they are just tender but still hold their shape, about 8 to 10 minutes. Transfer the potatoes to the ice water to cool completely. Drain the potatoes and pat dry with a towel.
- In a small bowl, whisk the lemon juice, garlic, oil, oregano, 1 teaspoon salt and 3/4 teaspoon pepper. Place the tomatoes, basil and parsley in a large serving bowl. Add the tuna and toss gently to combine. Add the green beans and potatoes and gently combine. Pour the dressing over the salad and toss to coat.
GREEN BEAN CASSEROLE WITH MASHED POTATO TOPPING

- Prepare pasta according to package directions, adding green beans during last 3 minutes of cooking.
- Drain; set aside.
- Preheat oven to 375 degrees.
- Spray 2-quart casserole dish with nonstick cooking spray.
- Coat bread crumbs with melted butter.
- Coat large, nonstick skillet with nonstick cooking spray.
- Heat over medium-high heat.
- Add celery, bell pepper and onion.

ONE-PAN TUNA-WHITE BEAN CASSEROLE
This is not the classic, cream-of-something soup tuna casserole you may be familiar with. It's based on a recipe for a Breton tuna and white bean gratin from the food writer Diana Henry's cookbook, "Simple" (Mitchell Beazley, 2016). Several steps were eliminated, and an essential potato chip topping was added, which may put it squarely into tuna casserole territory. But you can call it whatever you like. - Heat oven to 350 degrees. In an ovenproof skillet, sauté a chopped onion (or shallots, scallions or leeks) in olive oil over medium-high heat until soft, about 5 minutes.
- Add red-pepper flakes, salt and garlic cloves. Throw in the rosemary sprig, if using. Add anchovy fillets, if using. Cook for another 2 minutes, until the garlic is slightly golden and very fragrant.
- Add the white beans and the wine. Let it simmer until the liquid evaporates and the beans are soft, about 5 minutes, then mash the beans with a potato masher or a fork. Make them as smooth or lumpy as you like. You just want to release some of their starch. Turn off the heat.
- Now, add the milk and the tuna. If you have the oil-packed kind, add the oil. If you have the water-packed kind, drain them, and drizzle in more olive oil.
- Mash the tuna into the beans, leaving it a little chunky. Mix in the herbs, lemon zest and add lots of black pepper. Finally, mix in 2 to 4 tablespoons of any kind of grated cheese. Taste and add more salt and pepper if needed.
- Spread the mixture evenly in the skillet, and top it with potato chips. Scatter on more grated cheese, about another 2 tablespoons, and dot the top with little nuggets of butter.
- Bake until the tuna mixture bubbles around the edges, 20 to 25 minutes. If you want the potato chips to get more brown, you could run the whole pan under the broiler. Finish with lemon juice.

- Place the peeled and halved russet potatoes in a medium saucepan. Fill with enough water to cover the potatoes. Add some salt, cover and bring to a boil. - PREPARE POTATO BAKEPeel potatoes and dice into 1-2cm cubes. In a large saucepan, dissolve chicken stock powder in approximately 1.5L boiling water. Add potatoes and boil for 15 minutes, until tender.
- Meanwhile, grate courgette and pat with paper towels to remove excess moisture. Crush garlic and drain cans of corn and tuna.
- Make the cheesy sauce by melting butter in a medium saucepan over a medium heat. When butter is bubbling, stir in flour and cook for 1 minute.
