CREAMED TUNA IN TOAST CUPS

My mother's quick and easy recipe. This recipe uses ingredients you always have on hand in the pantry. It's great when you're in a rush.

Creamed Tuna in Toast Cups image

Steps:

  • Over low heat, melt butter in a saucepan and stir in flour. Slowly add milk while stirring. DO NOT bring to a boil. Cook and stir constantly only until slightly thickened.
  • Drain tuna and add to mixture.
  • Lightly stir in salt, pimento and green peas (if used).
  • Push bread slices into greased muffin tins to form a cup. Toast in oven until light brown.
  • While toast is warm, pour creamed tuna mixture into bread cups and serve.

2 tablespoons butter
2 tablespoons flour
3/4 cup milk
1 (6 ounce) chunk light tuna
1 teaspoon pimiento, diced
2 tablespoons baby green peas (optional)
6 slices bread
salt

Steps:

  • Make cream of mushroom soup according to the directions on the can.
  • Stir in canned tuna and egg slices. Heat thoroughly. Meanwhile, toast bread slices.
  • Spoon tuna mixture over slices of whole wheat toast. Serve.

10-minute tuna-bean toasts image

Steps:

  • Toast as many slices of French bread as you need. Meanwhile, lightly mash the beans. Pour 2 tbsp of tuna oil over the beans, then flake in the tuna. Gently mix in the parsley, and season to taste.
  • When the toast is ready, drizzle it with a bit of the tuna oil. Top the toast with a slice of tomato and top the tomato with a spoonful of bean mix. Scatter over the sliced onion. (Any extra bean mix will keep in the fridge for up to 2 days.) Drizzle the toasts with a little more oil (use olive oil if you run out of tuna oil) and serve.
