  • Shred the turkey into small pieces. In a large bowl, combine the natural yogurt, mayonnaise, mango chutney, mild curry powder and the zest and juice of the lemon. Season well.
  • Add the turkey to the bowl along with the diced mango and chopped coriander, and mix well. Break the Baby Gem lettuces into leaves and serve the turkey on top, scattered with toasted flaked almonds.

Spicy Turkey Lettuce Cups with Red Pepper Jelly image

Steps:

  • Heat the sesame oil in a large nonstick skillet over medium heat. Add the scallion whites, ginger, garlic and jalapeno; cook, stirring, until golden, 1 to 2 minutes. Increase the heat to medium high and add the turkey and 1/2 teaspoon salt; cook, stirring and breaking up any clumps, until browned, about 4 minutes. Add the water chestnuts, carrots, red pepper jelly and soy sauce; cook, stirring, until the carrots are slightly wilted, about 2 minutes.
  • Transfer the turkey mixture to a bowl, and top with the scallion greens and cilantro sprigs. Serve with lettuce leaves.
  • Combine the preserves, bell peppers, red pepper flakes, vinegar and 1/4 teaspoon salt in a blender; puree until smooth. Transfer to a small saucepan and bring to a brisk simmer over medium heat. Cook, stirring often, until thickened and syrupy, about 10 minutes. Transfer to a jar and cool completely. Refrigerate for up to 1 week.

  • Cook the noodles as the label directs, then drain and toss with 1 tablespoon roasted peanut oil. Meanwhile, whisk the lime juice and 2 teaspoons teriyaki sauce in a small bowl. Combine the jalapeno (remove seeds for less heat), ginger and lime zest in a mini food processor and pulse until finely chopped, or finely chop with a knife.
  • Heat the remaining 1 tablespoon roasted peanut oil in a large nonstick skillet over medium-high heat. Add the onion and cook, stirring, until soft, 5 minutes.   • Preheat oven to 425.
  • Spray bottom and sides of oven-proof bowl (or muffin tins).
  • Spread stuffing along sides and bottom, making a "nest".
  • Bake until stuffing has dried and is slightly crispy (15-20 minutes or more, depending upon how moist the stuffing is). Turn oven down to 350.
  • Add turkey to bottom of nest.
  • Crack 2-3 eggs in a cup, being careful not to break yolks.
  • Pour eggs into nests.
  • Bake until egg whites are done, about 15 minutes.
  • Options include sprinkling some shredded cheese on top a few minutes before they're done, but this moves away from normal Thanksgiving fare. If you have leftover gravy, pour it on. I find the seasonings in the stuffing are enough to preclude adding additional seasoning, but this is to taste.

  • Make your wasabi mayo first. You can also make this the night before.
  • Be mindful, as it sits it gets stronger.
  • Preheat your oven to 350 degrees.
  • Spray a mini muffin tin with cooking spray.
  • Place one wonton wrapper into each hole. Making sure it is pressed down to the bottom.
  • Bake at 350 degrees for 10-12 mins or until golden.
  • In a large bowl, combine turkey, onion, garlic & ginger.
  • Season with pepper, to taste.

  • Mix together well (careful not to over mix or meat will be tough).
  • You want the mixture to be a nice light brown color.

  • Preheat oven to 400 degrees F (200 degrees C). Spray 20 muffin cups with cooking spray.
