DOUBLE CHOCOLATE BARS
"A friend brought these fudgy bars a few years ago to tempt me with yet another chocolate treat," notes Nancy Clark of Zeigler, Illinois. "They are simple to make...and cleanup is a breeze! They're very rich, though, so be sure to cut them into bite-size pieces."

- Combine cookie crumbs and butter; pat onto the bottom of an ungreased 13-in. x 9-in. baking pan. , In a microwave, heat milk and 1 cup chocolate chips; stir until smooth. Pour over crust. Sprinkle with remaining chips., Bake at 350° for 10-12 minutes or until chips begin to melt but do not lose their shape. Cool on a wire rack.

- Heat oven to 350°F. Stir cookie mix, oil, water and eggs with spoon until soft dough forms. (If dough is too stiff, stir in additional 1 to 2 teaspoons water.)
- Spread dough in ungreased rectangular pan, 13x9x2 inches.
- Bake 25 to 30 minutes or just until set; cool. For 36 bars, cut into 6 rows by 6 rows.

CAKE MIX BROWNIES
These cake mix brownies are a mashup of two of my favorite desserts. A woman I worked with gave me a recipe for chocolate caramel brownies, and I have a recipe for yellow cake mix bars. - Preheat oven to 350°. Line a 13x9-in. baking pan with parchment; grease paper. In a large bowl, beat chocolate cake mix, melted butter and 1/3 cup evaporated milk until blended; batter will be thick. Reserve 1/4 cup batter for topping. Spread remaining batter into prepared pan. Bake 6 minutes. Meanwhile, in a microwave, melt caramel bits and remaining 1/3 cup evaporated milk; stir until smooth. Sprinkle hot chocolate crust with semisweet chips; pour caramel mixture over top. Set aside. In another large bowl, beat yellow cake mix, egg and 1/2 cup softened butter until combined; batter will be thick. Reserve half for topping. Crumble remaining mixture over caramel layer. Bake 6 minutes. In a microwave, melt sweetened condensed milk, milk chocolate chips and the remaining 1 tablespoon softened butter; stir until smooth. Pour over yellow cake layer. Sprinkle with reserved yellow and chocolate cake batters. Bake until top is golden brown, 20-25 minutes. Cool completely on a wire rack. Store in an airtight container.

Steps:
- In a saucepan, melt the first pound of semisweet chocolate with the butter, stirring occasionally; set aside.
- Preheat oven to 350*F. Grease and flour a 13x9" baking pan, or line with parchment paper.
- In a large bowl, beat the eggs. Gradually beat in the sugar until the mixture is thick and pale.
- Beat in the melted chocolate, vanilla, and dissolved coffee.
- In a small bowl, stir together the flour, baking powder, and salt.
- Add to the chocolate mixture just until combined; do not overmix.
- Gently stir in the chocolate chunks.
- Spread batter evenly in the prepared pan.
- Bake 25-30 minutes. The bars will be shiny on top, and a toothpick will test almost done.
- Cool completely in the pan on a wire rack; cut into bars. (These are very gooey when warm, but supremely delightful!).
