- Fry pickles in several batches until golden brown and slightly crisp on the outside with a moist interior, 1 to 2 minutes. Drain on paper towels.

ALMOST-FAMOUS FRIED PICKLES
In this month's issue of Food Network magazine, they've attempted to duplicate Texas Roadhouse's famous fried pickles with dipping sauce. The intro tells of a restaurant manager's wife who had a craving for them (and a bun in the oven, perhaps?), so these were created. They became such a hit, they are now served at all of their locations. Yippee Ky Ay!

- Place an oven-safe cooling rack onto a baking sheet. Mist lightly with cooking spray. Make sure you have an oven rack in the center of your oven and set the oven to broil.
- Drain the pickles and lay them on a surface to pat dry with a paper towel. Set up an assembly line to coat each pickle in first the flour mixture, then the egg wash and then the panko crumbs. Make sure each pickle chip is fully coated on all sides during each step and place them on the cooling rack on the baking sheet when coated.
