VANILLA SLICE

In New Zealand, I would always love going to the bakery to buy a vanilla slice. Now that I have moved to England, we can't get them anymore. I found this recipe in a cookbook my Mummy had hidden away, and the memories came pouring back

Vanilla Slice image

Steps:

  • Line a 23cm square slab pan with foil, bring foil up to overlap sides of pan.
  • Place pastry sheets on lightly greased oven trays.
  • Bake in a hot oven about 6 minutes, or until well browned.
  • Cool.
  • Gently flatten pastry with hand.
  • Fit 1 pastry sheet in prepared pan.
  • Combine sugar, cornflour and custard powder in pan.
  • Gradually stir in milk. Stir until smooth.
  • Add butter and stir over heat until mixture boils and thickens.
  • Simmer, stirring, about 3 minutes or until very thick and smooth.
  • Remove from heat and stir in yolks and essence.
  • Pour hot custard over pastry in pan.
  • Top with remaining sheet of pastry, flat side up.
  • Press down slightly.
  • Cool.
  • Spread pastry with passionfruit icing.
  • Cut when set.
  • FOR THE ICING:.
  • Sift icing sugar into small heat-proof bowl.
  • Stir in butter, passionfruit juice and enough water to make a stiff paste.
  • Stir icing over hot water until spreadable.
  • Recipe can be made a day ahead.
  • Store covered in refrigerator.
  • Do not freeze or microwave.

2 sheets premade puff pastry
1 cup caster sugar
3/4 cup cornflour (I always use arrowroot because it is better for you)
1/2 cup cups custard powder
1 liter milk (4 cups)
60 g butter
2 egg yolks, lightly beaten
2 teaspoons vanilla essence
2 cups icing sugar
1 teaspoon soft butter
2 tablespoons passion fruit pulp, strained
2 teaspoons water, approximately

An Australian tradition. Actually I don't know where it comes but it's served in every school tuckshop (canteen) and bakery in the land. This is always popular and is my husbands favourite.

Passionfruit Vanilla Slice image

Steps:

  • Preheat oven to 210°C.
  • Line 2 oven trays with baking paper and place one pastry sheet on each tray.
  • Prick the pastry all over with a fork and bake for 10 to 15 minutes.
  • Cool.
  • Make the custard by mixing the custard powder, sugar and cream in a heavy saucepan.
  • Gradually add the milk, stirring all the time on a medium heat until the custard boils and thickens.
  • Remove from the heat and stir in the essence.
  • Put a bit of baking paper or cling wrap on the surface so it doesn't get a skin and cool completely.
  • Make the icing by combining the passionfruit, butter and icing sugar in a heatproof bowl.
  • Stand over a pan of simmering water and stir until the icing is smooth and remove it from the heat.
  • Place one sheet of pastry into a baking tin of the same size.
  • You can cut the pastry to fit if needed.
  • Spread evenly with the custard.
  • Turn the other pastry sheet upside down and place on top of custard.
  • Spread the icing evenly over the top.
  • Refrigerate for several hours.
  • The pastry will soften slightly and the custard should be firm.
  • Cut into squares to serve using a serrated knife.

Place the pastry on a well-floured surface and roll into a rectangle, about 36 centimetres x 24 centimetres and 5 millimetres thick, then place on the baking tray. Bake for 14-15 minutes or until crisp and brown. Leave to cool for five minutes, then carefully transfer to a wire rack.
  • 2. To make the custard, place the egg yolks in a bowl and whisk with the sugar and scrapped vanilla. When the sugar has dissolved, gently whisk in the cornflour. Add the warm milk and stir with a whisk gently to prevent lumps forming. Pour the custard into a clean saucepan and place over a low-medium heat. Cook, stirring constantly with a wooden spoon for 12 to 15 minutes or until the custard is very thick. Cover with plastic wrap and leave to cool.
  • Place the icing sugar in a small bowl, add the passionfruit and mix until you have a smooth paste. Slice the pastry with a serrated knife in half horizontally. Mix the custard a little to soften it then spoon it over the bottom piece of pastry, place the other piece on top and press gently. Pour the icing over the pastry and spread it with a spatula. Refrigerate for 30 minutes before cutting into desired shapes.

Dust 1 tablespoon of icing sugar until covered with a thin layer of icing sugar, then place another sheet of baking paper on top and weigh down with another tray. Bake for 20 minutes, then remove the top baking tray and paper and cook for another 10 minutes until crisp and golden. Cool on a rack and repeat with the second sheet of pastry.
  • Make the creme patissiere: Put the milk into a saucepan and bring it to a simmer, then take it off the heat and let it cool for a few minutes. Put the eggs and sugar into a large mixing bowl and whisk them together, then add in the flours and vanilla and whisk them through. Tip the warm milk into the egg mix, mix it all together then return the whole mixture to the saucepan over a low heat, and use the whisk to stir constantly while you bring it to the boil. Once the custard has reached a boil and thickened substantially, remove it from the heat and let it cool for 5 minutes while you prepare the base.
  • Cut two long strips of greaseproof paper, each the width of your 20 centimetre square cake tin. Lay one piece across the tin, so that it lines the bottom and 2 sides, and hangs over each side. Repeat with the second piece of paper, in the other direction so all four sides are lined. Trim the pastry sheets to fit snugly in the pan and place 1 sheet in the base. Pour in the warm custard mixture, use a small palette knife or the back of a spoon to smooth it over, then top with the remaining pastry sheet and press it down firmly but gently. Chill for 4 hours, or until set firm.
  • Make the passionfruit icing: Sieve the icing sugar into a bowl then add the melted butter and passionfruit pulp and stir until smooth. Spread the icing over the chilled slice while it’s still in the tin, the put it back into the fridge for half an hour. Once the icing has set, use the paper strips to carefully lift the whole slice from the tin. Use a pastry knife to slice into 8 rectangles, then serve.
