RICH, FUDGY VEGAN BROWNIES

Soooooo good - tastes just like a brownie should. Even the most experienced dessert eaters wouldn't guess they are vegan. Recipe from Vancouver magazine.

Rich, Fudgy Vegan Brownies image

Steps:

  • Sift together the flour, sugar,cocoa, baking powder and soda, and salt.
  • In a separate bowl, combine the coffee, soy milk, and oil.
  • Add the liquid to the dry ingredients and mix; then stir in the nuts and chocolate chips.
  • Pour batter (it will be quite liquidy) into a greased 9x9" pan and bake at 325º for 25 minutes, or until a toothpick inserted in the middle comes out clean.
  • (Note- for a smaller pan, the baking time could be substantially longer- a 7x10 pan took about 40 minutes).
  • For glaze- melt the chocolate and margarine and whisk, then drizzle over brownies.
  • (Note- this is a lot of glaze- an ounce of chocolate and a tablespoon of margarine makes a nice amount).

1 1/2 cups unbleached flour
1/2 cup cocoa
1 1/2 cups brown sugar
3/4 teaspoon baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
3/4 cup brewed coffee
3/4 cup soymilk
1/3 cup vegetable oil
1/2 cup walnuts, roasted and chopped (optional)
1/2 cup chocolate chips or 1/2 cup carob chips
7 ounces dark Belgian chocolate (optional)
5 ounces margarine (optional)

VEGAN CHOCOLATE-GANACHE FROSTING

Swapping coconut milk in for cream in a standard chocolate-ganache recipe yields a rich dairy-free topping. Because of the high ratio of coconut milk to chocolate, the frosting will take longer to thicken, but the decadent taste and airy texture are well worth the wait. Pair it with our Vegan Chocolate Cupcakes.

Steps:

  • Place semisweet chocolate in a heatproof bowl.
  • Bring coconut milk just to a boil; pour over chocolate.
  • Let stand 2 minutes, then stir until smooth and glossy. Let cool, stirring occasionally,until thick, about 2 hours. Store in an airtight container at room temperature up to 2 days.

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Blend almond milk, 1 cup maple syrup, vanilla extract, and 1 1/2 teaspoon salt in a blender. Mix in 3 cups cocoa powder. Pour batter into a large bowl; fold in ground almonds and ground cashews. Pour batter into prepared baking dish; spread evenly to 1/2-inch thickness.
  • Bake in preheated oven until top is dry and edges have started to pull away from the sides of the pan, about 1 hour. Remove from oven and cool completely, about 30 minutes.
  • Blend 3 cups cocoa powder, coconut oil, 3 tablespoons maple syrup, cinnamon, and pinch of sea salt together in blender; spread ganache mixture over brownies.
  • Refrigerate brownies to set, about 30 minutes; cut into squares.

Easy One Pot Fudge Brownies With Ganache Topping image

Steps:

  • Heat oven to 350F; Butter and flour 13 x 18 half sheet pan.
  • In large, heavy-bottomed pot, melt butter over moderately low heat. When it's half melted, add chocolate and continue to melt two together, stirring often. Be sure to scrape bottom of pot and lower heat, if necessary, so chocolate doesn't scorch. when about three-courts of butter is melted, turn heat off and let rest of butter and chocolate melt from heat of pan.
  • Gradually stir in sugar. Continue to mix until most of the sugar is melted and mixture is smooth.
  • Add eggs, 1 at a time, beating vigorously with a wooden spoon until each is fully incorporated before adding next. Beat in vanilla. Add flour in 2 additions, m fixing just until blended.
  • Turn batter into prepared pan and spread out evenly. Bake 20 - 22 minutes. Top should be firm and brownies just beginning to separate from edges. Do not overbake. Insides should be soft and fudge.
  • Prepare ganache. Place chocolate bits into bowl. Warm cream in a pot until just simmering. Pour warm cream over chocolate and let stand until chocolate has softened, about 5 minutes. Place butter into bowl and blend all ingredients until smooth. Let cool a little before using.
  • Let cool completely, then spread ganache over pan. Cut into 3-inch squares.
