CHICKEN VENEZIANA

A delicious Italian meal. This is from "Rillo's", a local Italian restaurant. My DH doesn't like snow peas, so I omit them. He loves prosciutto so I buy extra. This meal is great served with garlic bread.

Chicken Veneziana image

Steps:

  • Saute chicken cubes in 2 Tbsp butter.
  • Remove with slotted spoon and set aside.
  • Saute mushrooms in same skillet.
  • Remove with slotted spoon and set aside.
  • Add 1/4 cup butter, garlic, cream, salt, pepper,& parsley.
  • Boil on high heat just till slightly thickened.
  • Add frozen peas; cook 5 minutes.
  • Add chicken, mushrooms, parmesan, and snow peas.
  • Heat through until snow peas are just tender.
  • Place cooked, drained cappellini on large platter.
  • Spoon some chicken sauce over pasta to cover it, reserving some sauce.
  • Top with provolone& prosciutto.
  • Broil until cheese melts.
  • Serve with extra chicken sauce on the side.

2 1/2 lbs boneless skinless chicken breasts, cut into cubes
6 tablespoons butter, divided
1/3 lb sliced mushrooms
1 clove garlic, minced
1 quart light cream
salt and fresh pepper
2 tablespoons chopped parsley
1 1/2 cups frozen peas
1 cup fresh snow pea
1/8 cup parmesan cheese
1/2 cup shredded provolone cheese or 1/2 cup mozzarella cheese
1/4 cup prosciutto ham, sauteed in some butter,& broken into pieces (imported-buy at deli)
1 lb capellini, cooked

This is from the Olive Garden, I had this for lunch and was so impressed I went on to the Olive Garden website, and there it was. Delicious and low in fat and calories. OG does not serve pasta with this, so it is a nice light meal, served with salad and bread sticks, of course.

Venetian Apricot Chicken image

Steps:

  • Combine Garlic Herb Seasoning ingredients in a small mixing bowl and set aside.
  • Blend apricot sauce ingredients in a sauce pan. Add salt & pepper to taste. Bring to a boil and remove from heat.
  • Combine tomato mixture in a separate mixing bowl and set aside.
  • Blanch asparagus and broccoli for 1 minute in a pot of salted boiling water. Transfer immediately to ice bath to stop cooking.
  • Coat sauté pan with 1Tbsp olive oil. While keeping ingredients separated in pan, heat cooled asparagus, broccoli and tomato mixture and until hot. Do not overcook.
  • Grill chicken until internal temperature reaches 165°F.
  • Place grilled chicken on a platter next to hot broccoli and asparagus. Sprinkle Garlic Herb Seasoning on broccoli. Pour tomato mixture on top of vegetables.
  • Top chicken breasts with apricot sauce and garnish with chopped parsley.

Steps:

  • Grease 3 - 13 x 9 inch pans. Line with wax paper. Preheat oven to 350 degrees F (180 degrees C).
  • Combine almond paste, sugar, butter, egg yolks and almond extract. Beat for 5 minutes until light and fluffy. Beat in flour and salt.
  • In a separate bowl, beat egg whites until stiff peaks form. With a wooden spoon, fold into the almond mixture.
  • Divide dough into 3 -1 1/2 cup portions. Add red coloring to one of the portions, and green to the another. Spread the batter in the 3 separate prepared pans (keeping the colors separate).
  • Bake for 15 minutes, or until edges are golden brown. (Each layer will be 1/4 inch thick). Remove cakes from pan immediately. Cool thoroughly.
  • Stack layers in a 9 x 13 inch pan, spreading apricot jam between layers (no jam on top layer). Place second 9 x 13 inch pan on top and weigh down with two 5 pound bags of sugar or flour. Refrigerate overnight.
  • Melt chocolate over hot water and spread over cake. Allow to set. Trim edges and cup into 1 inch squares.
