THE BEST PECAN PIE
This pie delivers plenty of classic flavors like brown sugar, vanilla and toasted nuts. We found that bourbon made a welcome addition. The alcohol bakes off leaving behind irresistible notes of smoke and caramel. Our all-butter crust perfectly balances the sweetness of the filling.

Steps:
- For the crust: Whisk together the flour, granulated sugar and salt in a medium bowl. Using your fingers, work the butter into the dry ingredients until it resembles yellow cornmeal mixed with bean-size bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
- Alternatively, pulse the flour, sugar, and salt in a food processor fitted with the metal blade until combined. Add the butter and pulse until it resembles yellow cornmeal mixed with bean-size bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade and bring the dough together by hand.
- Form the dough into a disk, wrap with plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
- Roll the dough on a lightly-floured surface into a 12-inch circle about 1/8-inch thick. Transfer the dough to a 9-inch pie pan and trim the edges, leaving about an extra inch hanging over the edge. Tuck the overhanging dough underneath itself to form a thick
- edge that is even with the rim. Flute the edge as desired. Freeze the pie shell for 30 minutes.
- Arrange the racks in the center and lower third of the oven and preheat to 400 degrees F. Put a piece of parchment paper or foil over the pie shell and fill with dried beans or pie weights. Bake on a baking sheet on the center rack until the dough is set, about 20 minutes. Remove from the oven and lift the sides of the parchment to remove the beans. Continue baking until the pie shell is lightly golden brown, about 10 more minutes. Reduce the oven temperature to 350 degrees F.
- While the crust is baking make the filling: Combine the butter, brown sugar, corn syrup, and salt in medium saucepan. Bring to a boil over medium heat and, stirring constantly, continue to boil for 1 minute. Remove from the heat and stir in the nuts, bourbon and vanilla. Set it aside to cool slightly, about 5 minutes. (If the crust has cooled, return it to the oven for 5 minutes to warm through.) Whisk the beaten eggs into the filling until smooth. Put the pie shell on a baking sheet and pour the filling into the hot crust.
- Bake on the lower rack until the edges are set but the center is still slightly loose, 40 to 45 minutes. (If the edges get very dark, cover them with aluminum foil half way during baking.) Cool on a wire rack. Serve slightly warm or at room temperature.
THE BEST KEY LIME PIE
A Floridian classic, this bright, creamy and tart dessert is so simple to make it will become a regular at your summer get togethers. Key lime juice is the star of this pie, adding a slightly more floral note than regular limes. But not to worry if you can't find fresh Key limes or the bottled juice - you can use standard limes with equally delicious results.

Steps:
- Preheat the oven to 350 degrees F.
- For the crust: Stir together the graham cracker crumbs, brown sugar and salt with a fork in a medium bowl. Pour in the butter and continue to stir until the mixture resembles wet sand. Transfer the crumb mixture to a 9-inch glass or metal pie dish and spread into an even layer. Use a 1/4 measuring cup or small glass to firmly press the crumbs into the bottom and up the sides of the pan. Bake until it is dry-looking and lightly browned, 7 to 10 minutes. Remove from the oven and let cool on a wire rack while you make the filling.
- For the filling: Combine the sweetened condensed milk and sour cream in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until combined, about 1 minute. Add the lime juice, egg yolks, salt and lime zest and continue to beat until the batter is smooth, about 2 minutes. Pour into the graham cracker crust. Bake until the pie is mostly set but jiggles slightly in the center, 15 to 20 minutes. Let the pie cool to room temperature on a wire rack, then refrigerate to set and chill completely, at least 2 hours, but preferably overnight.
- For the whipped cream topping: Combine the heavy cream, confectioners' sugar and vanilla in the bowl of a stand mixer fitted with the whisk attachment. Beat on high speed until stiff peaks form. Transfer the whipped cream to a pastry bag fitted with a large star tip. Pipe the topping decoratively on top of the pie. Alternatively, dolloped the whipped cream on slices of pie. Sprinkle with lime zest.

Steps:
- To make the dough for the pie crust, mix 2 1/2 cups all-purpose flour and 1 teaspoon each salt and sugar in a medium-size bowl. Cut 2 sticks chilled unsalted butter into pieces. With a pastry blender, cut in butter, working until mixture resembles coarse meal.
- Add 4 tablespoons ice water; work with hands until dough comes together. If dough is still crumbly, add more ice water a tablespoon at a time (up to 4 more tablespoons). Do not overwork.
- Divide dough in half, and flatten halves into disks. Wrap disks separately in plastic; refrigerate at least 1 hour.
- To form the pie shell, roll the dough on a floured surface into a 14-inch round. Wrap around rolling pin and carefully unroll over a 9-inch pie plate.
- Fit gently into bottom and side of plate. Use kitchen shears to trim dough to a 1-inch overhang; fold under, and seal to form a rim.
- Crimp rim with fingertips and knuckle. Repeat with remaining dough; wrap each with plastic, stack, and freeze.

- Brownie Pie. It’s kind of amazing what adding buttery pie crust can do to a good brownie! I’ve never experienced it, but I know some people find brownies (and chocolate cakes) a little too intense.
- Old-Fashioned Buttermilk Pie. Buttermilk pie is a southern twist on the classic British egg custard. Both include a shortcrust pastry and a heavenly custard-like filling.
- Cherry Pie with Cherry Pie Filling. I’ve tried canned fillings in the past, and they aren’t always great. Some can be pretty flavorless and not sweet enough for my palate.
- No-Bake Peanut Butter Pie. When it comes to no-bake pies, you really can’t go wrong with peanut butter and chocolate. You’ll more or less make a simple cheesecake filling (without the eggs), beating the cream cheese until completely smooth, and then adding in the sugar and peanut butter.
- Apple Pie Recipe with the Best Filling. Apple pie is quintessentially American, and it will be a hit at any party. Though I’ve never had a bad apple pie, per se, I’ve definitely had a slice or two that needed an extra dusting of cinnamon or a good dollop of whipped cream.
- Bisquick Cheeseburger Pie. I suppose you could call this a quiche or a tart, but let’s not split hairs. As long as it’s tasty, it gets a spot on the list.
- Coconut Macaroon Pie. As much as I love a nice custard filling, I also like a bit of texture in my sweets. This pie is the best of both worlds! First, it has a dreamy custard filling made with condensed milk and a touch of almonds.
- Pumpkin Pie. I don’t know about you, but I get that pumpkin spice craving year-round. So much so that I actively cook, puree, and freeze pumpkin during fall to make this pie in the spring.
- Vegan Lemon Meringue Pie. One bite of this, and you’ll call me a liar. No way is it vegan! I was blown away by the zesty filling, which is super bright, flavorful, and nice and sturdy.
- Millionaire Pie. If you’re looking for something a little different, something you don’t usually see at summer BBQs, this one’s for you! The base of the filling is a blend of cream cheese, condensed milk, and lemon juice.

- Peach Pie. We're not going to call any one pie the perfect pie, but this peach pie recipe is first for a reason: It's got a double crust and the nutmeg and vanilla enhance the fruit's flavor without overpowering it.
- Ruffled Milk Pie With Raspberries. If you don't know, now you know: Galatopita, or ruffled milk pie, is a Greek dessert in which phyllo is baked directly into a simple custard.

- BA’s Best Key Lime Pie. Here are just a couple of the tricks we learned from this recipe: Using coconut oil in place of some of the butter suggests hints of the tropics, and yogurt folded into the whipped cream reinforces the tang of the lime juice.
- Ricotta Pie With Amarena Cherries. Technically, this “pie” is a cheesecake, featuring both ricotta and cream cheese, but who cares what it’s called when it’s got this seductive combination of lusciousness and lightness?
- Pumpkin-Tahini Mousse Pie. While we tend to think of pumpkin pie as a fall treat, nutty tahini takes this one into other realms—plus the pie is enjoyable frozen.
- BA’s Best Apple Pie. Do not attempt to make this mile-high apple pie recipe in a standard pie plate. This is the time to call in the 9-inch deep dish. View Recipe.

- BA’s Best Blueberry Pie. To get this blueberry pie recipe right, you’ll need a deep-dish pie pan, which allows you to cram in 8 cups of blueberries (!) for the pie filling.
