QUICK AND EASY APPLE MUFFINS

A wonderful muffin recipe that's not too sweet! I like to add extra cinnamon for some more flavor. Great for breakfast with tea or coffee.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
  • Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.

Super Healthy Apple Muffins image

Steps:

  • To grate apples I use my food processor, but you can use a hand grater if you want. I also usually send the dates through with the apples in the processor.
  • Then chop up your 1/2 cup of apples, nuts, and dates (if not thrown in processor with apples). The apples and nuts add to the texture and the dates make it a little sweeter.
  • Combine all items from the Dry list. Then all from the Wet list.
  • Slowly add Dry to wet and mix until combined well.
  • Pour batter in sprayed muffin tin (or use papers if you like) and place in 350°F oven about 12-15 minutes. Remove and place on cooling rack.

Low-Fat Apple Spice Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Whisk the whole wheat pastry flour, all-purpose flour, baking soda, salt, cinnamon, nutmeg, allspice, and ginger together in a large bowl until evenly combined. Use your fingers to make a well in the center of the dry ingredients.
  • In a separate bowl, whisk the egg whites, skim milk, yogurt, raw sugar, canola oil, and vanilla extract until smooth; mix in the chopped apple.

Steps:

  • Preheat the oven to 450f. Grease and flour or line your large cup muffin pan.
  • Mix together the flours, baking powder, baking soda, salt, cinnamon, and nutmeg, set aside.
  • In a seperate bowl mix the oil, egg substitute, vanilla and sugar.
  • Then mix in the lowfat buttermilk gently.
  • Gently stir in the dry ingredients and fold in the apples until just mixed.

  • In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
