VIDALIA ONION TART

A rich creamy Vidalia onion tart.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a large heavy skillet, saute butter and diced Vidalia onion. Cook until lightly caramelized. Remove from heat and whisk in sour cream. Slowly whisk in evaporated milk. Whisk in dry soup mix until completely incorporated. Whisk in eggs. Mix in the shredded cheese until blended. Spoon mixture into an unbaked pastry. Place pie on a cookie sheet and place into oven.
  • Bake in preheated oven 40 to 45 minutes; or until a knife inserted comes out clean. Let stand 10 to 15 minutes.

VIDALIA ONION AND MUSHROOM PIE

This pie is an onion-lovers dream! You can use a store-bought frozen 9-inch deep-dish pie shell for this but you will have to reduce the Vidalia onions to one, and the sliced mushrooms to 2 cups. Prep time does not include making the pie pastry.

Steps:

  • Fit the pastry into a 10-inch deep-dish pie plate, then flute edges as desired; cover with plastic wrap and chill while making the filling.
  • In a large skillet melt butter over medium heat; add in the sliced onions with mushrooms; saute for about 15 minutes or until the onions are tender (adding in the garlic if using, the last 3 minutes).
  • In a large bowl whisk together the eggs with whipping cream, Parmesan cheese, thyme, salt, black pepper and nutmeg.
  • Add in the onion/mushroom mixture; stir to combine then spoon into the prepared pie shell.
  • Place the pie plate onto a baking sheet.
  • Set oven to 350 degrees (set oven rack to bottom position).
  • Bake for about 45 minutes or until done.
  • Delicious!

2 vidalia onions (halved and thinly sliced)
1 -2 tablespoon fresh mined garlic (optional)
2 -3 cups fresh mushrooms, sliced
3 tablespoons butter or 3 tablespoons olive oil

1 pinch dried thyme (or use 1 tablespoon fresh chopped thyme)

Porcini Mushroom and Barley Pilaf image

Steps:

  • In a glass bowl, put the porcini mushrooms. Add the boiling water and let sit for 30 minutes.
  • Take out the mushrooms and RESERVE the water.
  • In a pot, over medium heat, heat the oil and add the onion. Cook for 3-4 minutes until the onion becomes translucent. Add the garlic and barley and cook, while stirring, for about a minute.
  • Add the mushroom broth, the vegetable broth, the bay leaf, the thyme and salt and pepper, to taste. Simmer, covered, on low heat, for 45 minutes.
  • When ready to serve, remove the herbs and add the mushrooms.
  • Serves 4 as a main dish or 8 as a side dish.

  • In a medium saucepan of boiling water, blanch the mushrooms until just tender, about 2 minutes. Drain, pat dry and slice 1/4 inch thick.
