WALNUT-CREAM CHEESE FINGER SANDWICHES

- In a small bowl, beat the cream cheese, walnuts, parsley, green pepper, onion, lemon juice, nutmeg, salt and pepper until blended. , Spread about 2 tablespoonfuls over each of 12 bread slices; top with remaining bread. Cut each sandwich into three 1-in.-wide strips.

STILTON, PEAR AND WALNUT TEA SANDWICHES
Blue cheese, pears and walnuts are traditionally an English combination used for many dishes, and especially good in tea sandwiches.

Steps:
- Toast the walnuts, then finely chop.
- Remove the core from the pear and slice thinly. Set aside.
- In a bowl, combine the crumbled cheese and nuts.
- Add the butter, tarragon, shallot, optional salt and pepper to this mixture and mix well.
- Spread the seasoned butter onto 8 slices of bread.
- Lay thinly sliced pears on four of the bread slices.
- Cover with the remaining four slices of bread.
- Wrap each sandwich securely with plastic wrap and refrigerate until cold and mixture is set.
- Unwrap the sandwiches and trim the crusts.
- Cut each sandwich into 4 triangles or squares.
- Note: To add a little color to the sandwiches, you might like to sprinkle a bit of the herbs on top of each square or trangle.
BLEU CHEESE, WALNUT & PEAR SANDWICH
We really enjoyed these scrumptious tea sandwiches. They're slightly salty and creamy from the Bleu cheese spread. The mildly sweet and crisp slices of pear are a tasty contrast to the creamy filling. They are perfect sandwiches for parties or afternoon tea.

Steps:
- 1. Spread each slice of bread with a thin layer of butter.
- 2. Mash cream and Bleu cheese together in a bowl until combined well. Spread equal amounts of cheese on 3 slices of bread.
- 3. Sprinkle with a heaping tablespoon of walnuts over cheese.
- 4. Place 4 thin slices of pear on top of cheese and nuts.
- 5. Cover with remaining bread slices. Press down firmly.
- 6. Remove crusts and cut into 4 pieces.
- 7. Serve immediately or wrap well and chill until tea time.

Suggested to make sandwiches ahead of time and then cover them with waxed paper and then refrigerate them to prevent drying out -- but it is still best to prepare sandwiches as close to serving time as possible.

- In a large bowl combine first 4 ingredients (cream cheese - bell pepper) and stir in the onion, lemon juice and nutmeg. Season to taste with salt and pepper. Refrigerate for 1 hours.
- Spread one side of each piece of bread with butter and then top the buttered side of 12 slices of bread with the cream cheese mixture topping with another slice of bread, buttered side down. Cut off crusts with a sharp knife.
- Cut sandwiches diagonally into quarters.

- For the goat's cheese, walnut & roasted pepper sandwiches, mix together 200g soft goat's cheese with 100g cream cheese. Spread most of the mixture over 5 slices white bread. Slice 2 roasted red peppers into strips, divide between the bread, then top each with another slice white bread. Trim the crusts, then cut each sandwich into 4 triangles. Whizz 25g walnuts until fine. Spread 1 edge of each sandwich with the remaining cheese mix, then dip into the chopped walnuts.
- For the lemony cucumber & prawn sandwiches, lightly spread 6 slices wholemeal bread with butter. Cover with a layer of thinly sliced cucumber, then use a 5-6cm round cutter to stamp out 12 circles. Mix together 4 tbsp mayonnaise with zest 1 lemon. Top each circle with 1 halved large cooked prawn and a dollop of the lemony mayonnaise.
- For the creamy egg & cress sandwiches, boil 4 eggs for 8 mins. Cool the eggs, peel, mash, then mix with 2 chopped spring onions and 2-3 tbsp crème fraîche. Season, then spread over 12 small rolls. Add a little cress, pop on the lids and serve.
