- Preheat oven to 375 degrees F (190 degrees C).
- In a bowl, toss apple slices together with sugar, flour, salt, apple pie spice, and vanilla extract until evenly coated.
- Lay pie dough flat on a lightly greased baking sheet. Pile apples on one side of dough, leaving a 1 inch border. Brush border and opposite half side of dough with milk. Fold dough over apples, being careful not to over-stuff or the dough will tear. Fold over edges and pinch together to seal. Cut several small slits in the top of the pocket with a sharp knife, then brush top with beaten egg.
- Bake in the preheated oven for 40 minutes, or until flakey and golden brown. Serve warm, or at room temperature.

BREADED PORK CHOPS WITH WARM APPLE-CABBAGE SLAW
Think of this as a new, healthier (and less messy!) take on pan-fried pork chops and applesauce. We bread these low-calorie, low-fat chops in whole-wheat panko and spray them with cooking spray to get them crispy in the oven. We prefer to use McIntosh or Red Delicious apples, because they soften quicker.

- Adjust oven racks to the top- and lower-third positions and preheat to 425 degrees F. Put a wire rack in a rimmed baking sheet.
- Toss the cabbage, apples, 2 tablespoons of the vinegar, olive oil, 2 teaspoons of the brown sugar, 3/4 teaspoon salt and a few grinds of black pepper together on another baking sheet. Roast on the top rack until the cabbage and apples are golden in spots and tender, 20 to 25 minutes. Remove and toss with dill, if using.
- Meanwhile, lay the pork chops between two pieces of plastic wrap and pound until about 1/4 inch thick. Sprinkle all over with 1/2 teaspoon salt and a few grinds of black pepper. Combine 1 tablespoon of the sour cream and 1 teaspoon of the mustard in a small bowl and brush both sides of each chop with the mixture.
- Pour the panko crumbs out onto a plate and press each side of the pork chops into the crumbs. Generously spray both sides of each chop with cooking spray and place on the rack on the prepared baking sheet. Bake on the lower rack until the pork chops are golden, crispy and cooked through, 6 to 8 minutes, flipping halfway through.
- Mix together the remaining 2 tablespoons of sour cream, 2 teaspoons water and the remaining 1 teaspoon each mustard, brown sugar and vinegar. Divide the pork chops and apple slaw among four plates; drizzle the chops with some of the sauce.
FRIED APPLE PIES

- Heat a large cast-iron skillet over medium heat. Add the brown sugar, butter and 1 tablespoon water. Cook, stirring, until the sugar is dissolved and the mixture is bubbling. Add the apples, vanilla, salt, cinnamon and lemon juice. Mix together the cornstarch and 1 tablespoon water in a small bowl to create a slurry. Add the cornstarch mixture to the skillet and stir to combine. Cook, stirring occasionally, until the apples are tender, about 5 minutes. Pour into a heatproof bowl and let cool completely. You can make this ahead of time and chill in the fridge a day or so in advance if needed.
- To make the pies, roll each biscuit into about a 5-inch circle that is about 1/8 inch thick. Spoon 2 generous tablespoons of the apple filling on each round of dough, just off center. Use your finger and run a little water around the edges to help them seal completely. Fold one half of each circle over onto the other half and seal in the apple filling, forcing out any air that you can. Press the edges together and crimp with a fork. Continue until they're all assembled.
- Heat the oil in a high-sided skillet over medium heat until it reaches 350 degrees F. Fry the pies 2 or 3 at a time for about 5 minutes, carefully turning them halfway through. Remove them to a paper towel-lined baking sheet to drain.
- When all the pies are fried, sift the confectioners' sugar over top. Serve with Cinnamon-Caramel Sauce or store-bought caramel sauce.
- Mix the brown sugar, half-and-half, butter and a pinch of salt in a saucepan over medium-low heat. Cook, whisking gently, until it thickens, 2 to 3 minutes. Whisk in the vanilla, cinnamon and a second pinch of salt and cook another minute to thicken further. Turn off the heat and allow to cool to room temperature before serving. Chill if not using immediately.
APPLE POCKETS

- In a large bowl, combine 1 cup flour, yeast, sugar and salt. In a saucepan, heat the water and butter to 120°-130°. Add to the dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. CRACKER BARREL FRIED APPLES
I grew up eating fried apples and then as an adult I discovered Cracker Barrel and their fried apples. This recipe is from another site and is as close as I have seen to Cracker Barrel. The recipe says you can freeze the cooked apples. I have never done this as there is never any left.

- In a medium skillet, combine the 2 cups apple juice and sliced apples.
- Simmer gently until apples are fork tender but not mushy, turning apples frequently.
- Remove apples from juice using a slotted spoon and place in an oven safe dish.
- In a blender, combine the remaining 1/2 cup apple juice, cornstarch, apple pie spice and sugar.
- Blend a few seconds until smooth.

- Place the apples in a saucepan with the sugar (if using). With a very sharp knife, remove the rind from the lemon (avoiding the bitter pith). Then mince the rind and add it to the saucepan. If the mixture becomes too dry, add a tablespoon of water, but the idea is to steam the apples in their own juices. Serve with healthy hot cakes.

- Peel and dice apples.
- Stir water and baking powder together in a small bowl.
- Combine the baking powder-water mixture, butter, brown sugar, cinnamon, nutmeg, and salt in a medium-size skillet over medium-high heat. Whisk together until combined and mixture has become thick and bubbly.
- Add apples and stir until they are fully coated and tender.
- Lay pastry out and flatten with rolling pin so that it is about ¼-inch (6cm) thick throughout.
- Preheat oven to 375°F (190°C).
- Slice pastry into 12 rectangles.
- Spoon apple mixture onto top 6 rectangles.
- Dip your finger in water and line the outer rim of each rectangle before sandwiching apple filling between two rectangles. Using a fork, press the sides around each rectangle to seal the filling in.
- Whisk an egg and brush it over the top of each pie then place them on a greased baking sheet.
- Using a knife, make 3 or 4 slits in each pie.
- Bake for 20-25 minutes or until golden brown.
- Fold a rectangle of parchment paper in half horizontally
- Take the bottom corners and fold up ¾ of the way and then ⅔ of the way.
- Flip the rectangle over and fold the left third into the center, taking the right third and folding it into the "wing" created by the middle fold.
- Flip this pocket over and use to hold and travel with an apple pie.

- Preheat oven to 375 degrees.
- Defrost puff pastry sheet.
- Cover the sheet with plastic wrap to prevent it from drying out.
- Mix cinnamon, brown sugar, and salt in a medium mixing bowl.
- Add apples and stir to coat with sugar and spice mixture.
- Cut pastry into 8 squares.
- Place apples in 4 of pastry squares.
- Dot apples with melted butter.
