Steps:

  • In a small bowl, combine dried cherries with warm water to cover. Set aside to soften.
  • In a medium skillet over medium-low heat, add 1 tablespoon olive oil and pancetta. Cook until fat is rendered, about 6 minutes. Drain pancetta on paper towels and discard all but 1 tablespoon of fat from the skillet.
  • Add 2 tablespoons of olive oil to the skillet and increase heat to medium-high. Return pancetta to pan and cook until crispy. Add garlic and cook until just golden, about 1 minute. Reduce heat, add thyme and stir well. Add 15 good turns of black pepper. Add vinegar, return pan to heat, and deglaze pan, scraping up all the brown bits that cling to the bottom and sides of the pan. Simmer until vinegar reduces by half. Whisk in porcini oil. Season with salt.
  • Put mixed greens in a salad bowl. Crumble the goat cheese over the greens. Quickly toss mixture with pancetta dressing so greens barely wilt. Drain cherries. Add cherries, toss again. Immediately transfer to plates and serve.

1 tablespoon chopped garlic
1 tablespoon chopped fresh thyme leaves
Freshly ground black pepper
1/4 cup cider vinegar
2 tablespoons porcini oil
Grey salt
6 cups mixed greens, such as frisee and baby spinach
5 ounces fresh goat cheese
1/4 cup dried cherries
3 tablespoons olive oil
1/4 pound pancetta, cut into 1/4- inch dice

WARM GOAT CHEESE AND SUN-DRIED TOMATO SALAD

This salad is hea-ven-ly! I make a few salads with goat cheese (what a yummy treat!), but this one, in which the goat cheese is warmed, is scrumptious beyond words. Very impressive, too! The vinagrette dressing is is a great one to use on other salads, as well. This comes from Linda McCartney's vegetarian cookbook and I often serve it with a grourmet soup and warm bread for a lovely, complete meal.

FRESH SUMMER ZUCCHINI, CHICKPEA AND GOAT CHEESE SALAD

It was 104 degrees in Houston today, and the last thing I wanted to eat was anything warm...so this is what I came up with. My amounts are estimates and , really, you should feel free to change things up to taste. I consider this a jumping off point, but I think it is open to all sorts of seasonal substitutions. I hope you enjoy - this was the perfect refreshing dinner to a blistering day. Update: We added some leftover salmon and served everything over a bed of lettuce - completely worth it!

Steps:

  • Combine all ingredients (except balsamic vinegar) in a bowl large enough to gently stir things together. I broke the goat cheese into smaller chunks before trying to incorporate it.
  • Season to taste. I would let it sit for a little while before eating to let the flavors meld, but it isn't 100% necessary.
  • Either splash with balsamic vinegar before serving or reduce some on the stove to drizzle on top. The sweetness and the acidity really play well with and enhance the fresh flavors.

3 (15 ounce) cans chickpeas, drained and rinsed (garbanzo beans)
2 garlic cloves, minced (I like to grind it to a paste on the cutting board)
1/2 small red onion, finely chopped
1 large zucchini, halved lengthwise and thinly sliced (raw)
1 medium red bell pepper, chopped in small pieces
2 ounces goat cheese (or more if you like it or want the salad "creamier")
1/4-1/2 cup pecans, toasted and chopped
1/4 cup craisins (or raisins...or nothing)
2 teaspoons of fresh mint, chopped
2 teaspoons fresh basil, chopped
1/2 teaspoon smoked paprika (I probably used more)
1/2 teaspoon extra virgin olive oil, just enough to lubricate everything
fresh cracked black pepper, to taste (I used a lot)
kosher salt, to taste (I barely used any)
red pepper flakes, to taste
balsamic vinegar (optional, but reduced and drizzled on top tastes phenomenal)

Steps:

  • Slice the goat cheese into four 1/2" disks. If the cheese crumbles, use your hands to form it back into a disk. Pour the bread crumbs onto a plate and toss with the thyme and a pinch each of salt and pepper.
  • Dip the goat cheese into the egg, then into the crumb mixture, turning to coat evenly. Place the disks on a plate and into the freezer for 15 minutes to firm up.
  • Preheat oven to 450 degrees. Place the goat cheese on a baking sheet coated with cooking spray and bake for 10 minutes, until the cheese is soft and the crumbs are toasted. Remove. While the oven is still hot, toast the walnuts for 5 minutes.
  • Toss the lettuce with the vinaigrette and pear. Divide between 4 plates. Top with walnuts and goat cheese.

Steps:

  • Pre-heat the oven to 190C.
  • Cut the Cos Lettuce up and put it into a serving bowl.
  • Put the Goat's Cheese into the oven onto a tray or any dish. Keep an eye on it every few minutes by putting a knife through the middle to see if it is soft in the middle. You want the Goat's Cheese to be firm on the outside but slightly soft and warm on the inside.
  • Put some olive oil and minced garlic in a small frying pan. Heat for about 15-30 seconds till it is warm. Pour it over the lettuce. Leave a little bit of oil and garlic in the pan.
  • In the pan, heat (not cook) the sliced tomato on both sides and the olives. Then put the sliced tomato and olives on top of the salad. The sliced tomato should be spread round the outer of the salad bowl (so that the Goat's Cheese can be place in the middle)
  • Once the goat's cheese is ready, slide it on top of the salad. Cracked Black Pepper to serve.

1 Goat's Cheese Round (approximately 150g per person)
Cos Lettuce
Kalamata Olives, pitted
1 Tomato, Sliced
1 Teaspoon of Garlic
Olive Oil (enough for the salad dressing)
Crack Pepper for serving
