AMAZING SHRIMP AND LANGOSTINO LOBSTER LINGUINE

It was our turn to host the 'Dinner Club'. Our theme was Italian. This was a great entree that did not take hours in the kitchen and allowed me to enjoy our company. Great fun with great friends!

Amazing Shrimp and Langostino Lobster Linguine image

Steps:

  • Bring a large pot of lightly salted and oiled water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Heat olive oil in a large saucepan over medium-high heat; saute bacon, onion, garlic, and red pepper flakes in hot oil until onion is golden brown, 10 to 15 minutes. Stir white wine into bacon mixture; cook and stir until wine is absorbed, 2 to 4 minutes.
  • Stir shrimp and langostino lobster into bacon mixture; saute until shrimp and langostino are pink, about 2 minutes.
  • Reduce heat to medium and stir cooked linguine into shrimp mixture. Stir peas, pesto sauce, and half-and-half into shrimp-linguine mixture; cook and stir until linguine absorbs the liquid, 5 to 10 minutes. Top servings with Parmigiano-Reggiano cheese.

2 tablespoons olive oil
12 slices cooked bacon, chopped
1 sweet onion, finely chopped
1 tablespoon minced garlic

1 pound uncooked medium shrimp, peeled and deveined
1 pound langostino lobster
1 ½ cups peas
1 cup basil pesto sauce
1 cup half-and-half
1 cup grated Parmigiano-Reggiano cheese

Steps:

  • Summer roll: Place all ingredients except rice paper in a bowl with the white vinegar and sugar. Reconstitute rice paper with the hot water. Fill paper with vegetables, crab and sausage. Roll up and slice into 2 pieces. Repeat with remaining rice papers.;
  • Sweet and sour sauce: Cut pineapple, put in blender and strain out the juice. Add the juice, vinegar, sugar and Sriracha to a small saucepan and bring to a boil. Combine the cornstarch and water and slowly add to the simmering sauce. When thickened, remove from the heat. Chill and pout into a squeeze bottle.
  • Scallion-Cilantro Puree: Put all ingredients for puree in blender, blend until smooth and pour into squeeze bottle.
  • Prawns: Split tails open on the prawns and remove antennas. Crush the Szechwan peppercorns and season prawns along with the salt. Add the oil to a large skillet over medium-high heat. Once heated add the prawns, remove the head and drizzle juices on tail.
  • Garnish: Plate mache, top with summer roll slightly off center and a prawn. Dust all with gold leaf and sauce the plate with scallion-cilantro puree. Dot plate with sweet and sour sauce and garnish prawn tails with edible orchid.

2 tablespoons sesame oil
1/3 cup olive oil

1 teaspoon salt
4 prawns, shell and tails intact
2 tablespoons Szechwan peppercorns
2 tablespoons salt
1/4 cup olive oil, for sauteing
Mache, for garnish
Gold leaf, for garnish
Edible orchids, for garnish

SINGAPORE CHILE PRAWNS

Singapore Chile Prawns comes from our lively East Coast Seafood tradition. In Singapore, the seafood restaurants have always lined the coast in the Eastern Part of Singapore and today this is still the same with the Seafood Centre offering eight restaurants along the coast, under the coconut trees. This dish is part of the repertoire of Singapore seafood recipes found in the East Coast and is considered one of Singapore's national dishes. The delectable sauce is slurped up with thick slices of white bread - delicious! Serve Singapore Chile Prawns with a tossed salad and you get a wonderful meal for the summer and fall.

Steps:

  • Make the Sauce: Whisk together all the ingredients in a bowl and set aside.
  • Make the Prawns: Cut down the backs of the prawns and remove the black intestinal vein. Set aside.
  • Heat the oil in a wok or shallow saucepan over high heat. Add the garlic and stir-fry for 1 minute. Add the chiles and stir-fry for another minute. Add the prawns and stir-fry until the shell turn slightly red, about 2 to 3 minutes. Add the sauce and stir-fry until the shells turn red.
  • Break the egg into the wok and, using a fork, streak the egg through the sauce (this is an important step, as the egg has to be in beautiful gold and white streaks). Simmer the sauce for a few seconds and remove from the heat. Stir in the scallions and lime juice.
  • Transfer the prawns to a platter, garnish with the cilantro, and serve with chunks of French bread.
  • Note: This dish is also wonderful with mussels, crabs or lobsters; or you could mix all the seafood together. It's a Singapore version of a French seafood stew.

8 fresh red chiles, roughly chopped
1 egg
2 scallions, cut into finger lengths
1 teaspoon freshly squeezed lime or lemon juice
1 small bunch cilantro, cut into 1-inch long pieces
Serving Suggestions: loaf of French bread
