GRILLED PEAR SUNDAE

Steps:
- Preheat grill to medium.
- In a small saucepan add butter, brown sugar, apple cider, cinnamon, ginger, and salt. Place onto grill until butter melts. Mix together until well combined.
- Place pears directly onto grill for 2 to 4 minutes. Turn and cook on the other side. Brush both sides of the pears with the butter mixture to glaze. Immediately take pears off the grill after glazing and place on a plate.
- Scoop ice cream into 4 serving bowls. Top with pears, pecans and whipped cream. Drizzle the remaining butter mixture on top and serve.
ASIAN PEAR CARAMEL SUNDAES
Asian pears, sometimes known as apple-pears, are incredibly juicy, sweet and crunchy. They're one of my favorite fruits to eat and to cook with, whether in a savory dish or a dessert. This recipe uses a pear to make a delicious fruit caramel to spoon over ice cream for a fruity sundae that's a perfect end to a meal.

- Place the sugar in a small saucepan and cook over medium heat until it has melted and begins to bubble, 1 to 2 minutes. Continue cooking until it turns light amber in color, 1 to 2 minutes longer, making sure to watch very closely to prevent burning. Immediately add the butter and cream and whisk until combined (it will bubble and boil, but just keep whisking!).
- Add the diced Asian pear to the caramel and cook until the pear is al dente, 2 to 3 minutes. Stir in the vanilla and salt and serve over your favorite ice cream with a dollop of whipped cream.
CARAMEL PECAN SUNDAES
Steps:
- For the caramel, mix 1/3 cup water and the sugar in a medium heavy-bottomed saucepan. Cook, without stirring, over low heat for 5 to 10 minutes, until the sugar dissolves. Increase the heat to medium and boil uncovered until the sugar turns a warm chestnut brown (about 350 degrees F on a candy thermometer), 5 to 7 minutes, gently swirling the pan to stir the mixture. Be careful; the mixture is extremely hot! Watch the mixture constantly at the end, as it will go from caramel to burnt very quickly. Turn off the heat. Stand back to avoid splattering and slowly add the cream and vanilla. The cream will bubble violently and the caramel will solidify; don't worry. Simmer over low heat, stirring constantly, until the caramel dissolves and the sauce is smooth, about 2 minutes. Allow to cool to room temperature, at least 4 hours. It will thicken as it sits.
- To assemble the sundaes, place 1 scoop of vanilla ice cream and 1 scoop of butter pecan ice cream in each dish and sprinkle with toasted pecans. Drizzle with caramel sauce and serve extra sauce on the side.
POACHED PEAR SUNDAES

Steps:
- Bring water, honey and orange peel to boil in heavy medium saucepan. Add pears. Cover and simmer over medium-low heat until pears are tender but still firm, about 12 minutes. Refrigerate pears in poaching liquid until cold, about 3 hours. (Pears can be prepared 1 day ahead.)
- Slice pears. Arrange slices decoratively in 2 dishes. Top with 1 scoop vanilla ice cream. Drizzle chocolate syrup over. Garnish with whipped cream and grated chocolate.
RED HOT CINNAMON PEAR SUNDAES
Red hot cinnamon candies have been 1 of my favorite ingredients since my childhood & SusieQusie can tell you that pears have also been favored in recent yrs. This is the 2nd of 2 recipes I've entered that feature cinnamon candies & my source is eatcannedpears.com. (Time does not include time for sauce to cool)

- In a med saucepan, combine sugar, water & candies. Bring mixture to a boil, stirring constantly. Reduce heat to med & boil mixture for 10 min, stirring occ.
- Remove from heat & cool at least 20 min b4 using (or cool, cover & refrigerate to store).
- To Assemble Sundaes: Scoop ice cream into 6 dessert dishes & spoon sliced pears over ea sundae. Spoon cinnamon sauce over ice cream & sprinkle w/more cinnamon candies. Serve immediately & store any leftover sauce in refrigerator.
- NOTE: W/the combined sweetness of the canned pears, cinnamon candies & ice cream used for the sundaes -- I would be inclined to reduce the sugar amt in the sauce to 1/2 cup.

PEAR-CARAMEL ICE CREAM SUNDAES

- For Ice Cream:
- Melt butter in heavy 10-inch skillet over medium-low heat. Add sugar and cook until sugar melts (mixture will be grainy for first 10 to 12 minutes) and turns deep amber, stirring occasionally and pressing on sugar lumps to break up, about 20 minutes. Add pears (caramel will bubble and harden). Increase heat to medium-high and boil until liquid thickens and pears are very tender, breaking up large pieces of caramel and stirring occasionally, about 14 minutes. Transfer mixture to blender.
- Beat yolks to blend in medium bowl. Bring cream to boil in heavy medium saucepan. Gradually whisk hot cream into yolks. Return cream mixture to same saucepan. Stir over low heat until custard thickens slightly and leaves path on back of spoon when finger is drawn across, about 2 minutes; do not boil. Immediately add to pear mixture in blender. Add brandy if desired. Blend until smooth. Cover custard and refrigerate until well chilled.
- Process custard in ice cream maker according to manufacturer's instructions. Freeze ice cream until firm. (Can be prepared 1 week ahead. Keep frozen.)
- For Pears:
- Melt butter in heavy large skillet over medium-low heat. Add sugar and cook until sugar turns deep amber, stirring occasionally and breaking up sugar lumps, about 20 minutes. Add pears and sauté until tender but not mushy and caramel thickens slightly, about 9 minutes.
- Arrange 6 pear slices decoratively on each of 6 plates or in shallow bowls. Scoop ice cream atop pears. Drizzle with caramel syrup from skillet and serve.
