WEIGHT WATCHERS PASTA PUTTANESCA
I made this for years and then lost it. Have searched everywhere including online with no luck. Went to Miami and found the recipe in an old cookbook in the library there, eureka! Am posting this so I know where to find it, being the scatterbrain I am. It's delicious diet food.

Steps:
- Combine wine, oil, shallot and garlic in small microwavable bowl and microwave on high (100%) for 30 seconds.
- Add remaining ingredients except linguine and parsley; microwave on medium-high (70%) for 4 minutes, stirring halfway through cooking.
- To serve, arrange linguine in serving bowl; top with tomato-olive mixture and toss to combine, using two forks.
- Sprinkle with parsley.
- 229 calories, 6g fat, 3g fibre.
- Adding a teaspoons of grated Parmesan cheese to each serving increses the calories to 25.

- Place the oven rack in the center of the oven, preheat the oven to 375 degrees. Spray a baking sheet with nonstick spray.
- Press the spinach between layers of paper towels to remove any excess moisture. Place the cheese in a medium bowl and mash with a fork. Add the spinach, scallions, egg white, dill and pepper together until combined.
- Set the stack of phyllo sheets to one side, keep covered with a sheet of wax paper and a damp towel on top as you work.
- Lay 1 phyllo sheet lengthwise in front of you and brush the sheet lightly with oil. Top with another sheet and brush lightly with oil. Cut crosswise into 6 oven strips. Place a scant tablespoon of spinach mixture at the end of each strip. Fold one corner up over the filling, then continue folding in a flag fashion to form a triangle. Place on the baking sheet and repeat with the remaining filling and phyllo sheets to make 24 triangles. Brush the tops of the triangles lightly with any remaining oil.
- Bake until golden brown, about 25 minutes. Cool for 5 minutes and serve hot or warm.

- Preheat oven to 375°F Spray 2 (5 inch) square baking dishes or 2 (1.5 x 5.75 x 8 inch) foil pans with nonstick spray.
- Mix zucchini, spinach, and mushrooms on microwavable plate. Cover and microwave on high until vegetables are crisp-tender, 3-4 minutes, stirring once after 2 minutes. Drain; stir in 1/8 tsp of salt.
- Mix ricotta, 3 tbsp parmesan, oregano, red pepper flakes, and remaining 1/8 tsp salt in bowl. In each baking dish, layer, in order, 2 tbsp sauce, 1 half noodle, half of vegetables, 1 half noodle, half of ricotta mixture, 2 tbsp sauce, 1 half noodle, 1/4 cup sauce, and 1/2 tbsp parmesan. Cover with foil and bake 30 minutes. Uncover and bake until bubbling, 10-15 minutes.
