BLACK AND WHITE CHOCOLATE MOUSSE
Steps:
- Dark Mousse: In a bowl over barely simmering water, melt the bittersweet chocolate. Heat the milk in a saucepan until almost simmering and whisk it into the melted chocolate. Fold the whipped cream into the hot chocolate mixture; it will be rather soupy. Let cool slightly and transfer to a pastry bag or lockable plastic bag. Refrigerate at least 1 hour.
- White Mousse: In a bowl over barely simmering water, melt the white chocolate. Heat the creme fraiche in a saucepan until almost simmering and whisk it into the melted chocolate. Fold the whipped cream into the hot chocolate mixture; it will be rather soupy. Let cool slightly and transfer to a pastry bag or lockable plastic bag. Refrigerate at least 1 hour. (The recipe can be made up to this point and kept refrigerated up to 2 days in advance.)
- Insert the piece of plastic across the center (perpendicular to the bottom) of a ramekin or chocolate cup, so it divides the interior in half. If using plastic bags for piping, cut a corner off of each one. Pipe dark chocolate mousse on one side of the plastic, then white on the other. Pull out the plastic, and repeat. Refrigerate the ramekins until ready to serve.
- When ready to serve, make chocolate curls by shaving milk chocolate into curls with a sturdy vegetable peeler, and don't worry if they break up into shards. Shards look nice, too. Remove the mousses from the refrigerator. If using collar molds, warm the metal with a hot, damp cloth and then lift off. Sprinkle the chocolate curls on top and serve.
WHITE CHOCOLATE MOUSSE
Steps:
- In a large glass bowl, place the chopped white chocolate and set aside.
- Add the egg yolks and sugar to a small bowl and whisk until pale in color.
- In a saucepan, over low heat, bring 1/4 cup of the cream to a simmer, and slowly add the cream into the yolk and sugar mixture to temper. Pour the creamy mixture back into pan and stir with a wooden spoon until it coats the back of it.
- Pour hot mix into a fine mesh sieve placed directly over bowl with the chopped chocolate. Stir until completely smooth.
- In another bowl, whip remaining 1 cup of the cream to almost stiff peaks. Fold half the whipped cream into the white chocolate mix to lighten and then fold in the remaining whipped cream.
- Spoon the white chocolate mousse into 4 serving cups and refrigerate until set, approximately 1 hour.
- Garnish each serving with 3 blackberries and a sprig of mint, if using.

- Bring remaining 6 tablespoons cream and remaining 2 tablespoons corn syrup to simmer in heavy small saucepan over high heat. Reduce heat to low; add bittersweet chocolate and stir until melted and smooth. Cool to room temperature. Spoon enough sauce over each mousse to cover completely. Garnish with mint, if desired.
DARK CHOCOLATE MOUSSE

- Place chocolate in a large bowl set over a bain marie or in a double boiler at a low simmer. Stir chocolate until melted. Turn off the heat and let stand.
- Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks. Gradually add the sugar and continue whipping until firm.
- Remove the chocolate from the bain marie and using a whisk, fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. Cover the mousse and refrigerate for approximately 1 hour or until set. Serve in goblets topped with more whipped cream and shaved chocolate, if desired.
WHITE CHOCOLATE MOUSSE WITH KIRSCH

- Place chocolate, water, and Kirschwasser in a medium size heatproof bowl. Bring 1 inch of water to a simmer in a wide skillet. Turn the heat off and wait 30 seconds. Set bowl of chocolate in pan of water. Stir white chocolate mixture constantly until melted and smooth. Or, melt in a microwave on low for about 2 minutes. Stir until smooth and completely melted. White chocolate is very fragile and burns easily. Do not turn the heat on again under the skillet unless absolutely necessary. Let cool until a dab touched by your upper lip feels slightly cool. Whip the cream until soft peaks form--not too stiff. Carefully fold cream into cooled white chocolate mixture; the mousse will seem very soft. Scrape mold immediately into lined mold. Mousse sets quickly and should not be spread or manipulated too much after it is completed.

- Two days before you plan to serve the dessert, in a small saucepan, heat the cream over medium heat just until it boils. Immediately turn off the heat. Place the chocolate in a medium bowl. Pour the hot cream over the chocolate and whisk until melted and smooth. Strain into another bowl, cover, and refrigerate overnight.
- The next day, remove the mixture from the refrigerator and, using a mixer fitted with a whisk attachment or a hand mixer, whip it into fluffy, soft peaks. Return to the refrigerator.
- In a clean dry bowl, whip the egg whites until soft peaks form, then add the sugar and continue whipping until glossy and stiff, about 30 seconds more. Fold into the white chocolate mixture, and then spoon the mixture (or pipe through a pastry bag) into glasses or chocolate bags.
- Melt chocolate over hot water. Using a thin small clear 4-sided cellophane bag cut the top off to desired height. Un-crease the bag so it stands up and open. Using a paintbrush, coat the inside of the bag well with chocolate. Put in the freezer to set up until very hard, about 30 minutes. Cut the bag a little and pull it away from the chocolate. Store chilled until ready to serve. To serve, fill it with white chocolate mousse then lay it on a plate on its side so it looks like it's spilling over. Garnish it with a cascade of mixed berries and a mint sprig. You can fill it with truffles, too.
- Notes about the recipe: Ganache is a word that we've been seeing on more and more dessert menus. It has a rich, fancy, very French sound, but ganache is essentially just a combination of chocolate and water or cream. Depending on the proportions, the mixture can be used in a variety of ways: as a glaze, a filling, or a candy center, to name just the ways we use it in this book. With enough cream added, it becomes whip-able, and that's the foundation of this white-chocolate mousse. White chocolate is devastatingly popular, but it's also not exactly chocolate. It's mostly cocoa butter, extracted from cocoa beans and enhanced with sugar and vanilla. White chocolate is not the same thing as the "confectionery coating" or "white coating" you see in the market; real white chocolate contains cocoa butter. - Grease an 8 1/2 x 4 1/2 x 2 1/2 loaf pan with non-stick cooking spray, line with plastic wrap.
- Fill small roasting pan or baking dish with dried beans.
- Wedge loaf pan into beans, tilting it lengthwise so that the first layer of chocolate will be at an angle.
- Dark chocolate layer:.
- In saucepan over low heat, melt bittersweet chocolate with butter, stirring until smooth; stir in liqueur.
- Cool, fold in whipped cream.
- Pour mousse into loaf pan on the lower tilted side filling the pan from the center out lengthwise to the lower edge.
- Smooth top.
- Refrigerate, without removing from pan of beans, until mousse is firm, about 2 hours.
- White chocolate layer:.
- In saucepan, combine 3/4 cup heavy cream and gelatin, let stand 5 minutes.
- Add white chocolate and heat over low heat stirring until melted and smooth.
- Place pan in bowl of ice water.
- Stir until slightly thickened.
- Remove from ice water, stir in almonds.
- Fold in whipped cream.
- Reposition loafpan to tilt in opposite direction. (lengthwise.).
- Fill opposite side with white chocolate mousse. You will have one half dark chocolate and one half white chocolate coming down to an angle at the bottom center of the pan sloping (angling) upwards on each side. Like 2 triangles. Smooth white chocolate layer.
- Cover, chill til firm.
- Milk chocolate layer:.
- In saucepan over low heat, stir milk chocolate, butter and raspberry puree until smooth.
- Cool, fold in whipped cream.
- Level loaf pan and fill center with mousse, spread to edges.
- Chill til firm, about 2 hours.
- Raspberry sauce:.
- In food processor, puree thawed berries, strain into small saucepan. Stir in cornstarch and bring to a boil, stirring, simmer 1 minute.
- Cool, refrigerate covered until serving.
- Freeze mousse 1 hour before slicing.
- Lightly sift cocoa powder onto each serving plate.
- Add a slice of mousse, garnish with Raspberry Sauce, Chocolate Filigree and fresh raspberries.
- Chocolate Filigree:.
- Line baking sheet with waxed paper.
- Melt 3/4 cup chocolate melting wafers over low heat or in microwave.
- Fit a #3 plain tip onto pastry bag.
- Fill with the melted chocolate, pipe triangles of melted chocolate onto waxed paper.
- Add crosshatches to each one.
- Set aside til hardened.
- Carefully peel off of waxed paper.
- Store in covered container in cool place.

- Break the white chocolate and melt. Beat in the egg yolk and the water. Leave to cool. Whip the cream and gently fold in the cooled white chocolate. Leave it in a bowl and cover with clingfilm in the fridge for about two hours or until set.
- To make the sauce:
- Wash and cut the sharon fruits in 4. Whizz in a blender and add sugar and lemonjuice to taste. Place in the fridge.
- To make the chocolate grid:
- Gently melt the dark chocolate and place in a small plastig bag. Cut a small hole in the plastic bag with sizzors and pipe several small grids (aprox 3cmx3cm) on to a sheet of baking paper. Leave to cool/set in the fridge.
- To assemble the dish:
- Scoop out spoonfulls of the white chocolate mousse on to 4 small plates. Drizzle some of the sharon fruit sauce around. Scoop out the pulp from the passionfruits and dot around. Place a few dark chocolate grids on top of each dessert.
RASPBERRY WHITE CHOCOLATE MOUSSE

- Process berries in a blender or food processor until smooth. Strain mixture into a small bowl, and discard seeds. Add the sugar and liqueur, and stir until sugar dissolves. Makes 1 cup of sauce.

COMMANDER'S PALACE WHITE CHOCOLATE MOUSSE
The name derives from the first owner, Emile Commander, who opened this New Orleans institution in 1880 in the Garden District. In 1974, the Brennans took over and started the famous jazz brunch. - In a saucepan, combine the raspberries and the sugar.

- Whip the one and a half cups of heavy cream until soft peaks form.
- Add confectioner's sugar and whip until stiff peaks form.
- Whip the egg whites in a bowl with the cream of tartar, gradually adding the granulated sugar until stiff peaks form (do not overbeat).
- When the melted chocolate has cooled slightly, add the two tablespoons of heavy cream and stir to achieve a pouring consistency.
- Slowly add the chocolate mixture to the whipped cream, folding gently.
- Then, fold the egg whites and the chocolate/cream mixture together.
- To serve, spoon 2 tablespoons of raspberry sauce into the bottom of each of six large-bowled wine glasses (or martini or margarita glasses).
- Spoon the mousse over the sauce.
- Chill for at least two hours.
- Garnish with shaved semisweet dark chocolate.
