WHITE LILY FROSTED SOFT SUGAR COOKIES

DH and I attended the Southern Women's Show in Raleigh back in April and saw a presentation from the White Lily Flour folks on cookies. The cookies were tasty so I am saving the recipes here for future use. DH loves this kind of cookie from the store, so I hope to make them for him soon.

White Lily Frosted Soft Sugar Cookies image

Steps:

  • Heat oven to 375. Prepare baking sheet with no-stick cooking spray or parchment paper. Whisk together flour, baking soda, and salt in medium bowl. Combine shortening, sugar, egg, and vanilla in large bowl; beat 2 minutes. (Butter, powdered sugar, milk and 1 t. vanilla will be for frosting).
  • Stir in sour cream and half dry ingredients to the wet ingredients. Stir in remaining dry ingredients. Roll into 2" balls with oiled hands. Place on prepared baking sheet about 3" apart. Dip bottom of a glass into flour; press down to about 1/2" thickness.
  • Bake for 10-11 minutes or until cookies begin to look dry on top. (Cookies will not be brown) Cool 2 minutes; remove to cooling racks. Cool completely.
  • To prepare frosting, in a large mixing bowl, beat butter until creamy. Add sifted powdered sugar, milk, and 1 t. vanilla; beat on low until blended, beat on medium until light and fluffy. Add more milk if frosting is too thick. Stir in any desired food coloring and frost cookies.

Steps:

  • In a medium bowl, whisk the flour, baking soda, and salt to combine.
  • In a large bowl, cream the butter and sugar together with an electric hand mixer until light and fluffy, about 5 minutes. Add the egg and mix until fully incorporated. Add the sour cream and vanilla and mix until creamy. Add the flour mixture, a third at a time, until fully combined.
  • Lightly flour a work surface and turn out the dough. Press the dough together into a disc and wrap in plastic wrap. Chill for 1 hour in the refrigerator.
  • Preheat the oven to 300˚F (150˚C). Line a baking sheet with parchment paper.
  • Remove the plastic wrap from the dough and lightly flour a work surface. Roll out the dough to about ½-inch thick. Cut out circles using a glass or cookie cutter.
  • Transfer the cookies to the prepared baking sheet, leaving about 1 inch in between cookies. Bake for 8 minutes, until the cookie bottoms are golden brown and the tops are pale. Let the cookies cool on a wire rack.
  • Make the frosting: in a large bowl, beat the butter with an electric hand mixer until fluffy. Sift in the powdered sugar and mix until incorporated. Add the milk and continue to beat until the frosting is smooth and velvety. Add food coloring, if desired.
  • Frost the cooled cookies and decorate as you wish.
  • Enjoy!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat vegetable shortening, white sugar, 1/4 cup milk, eggs, and 1 teaspoon vanilla extract together in a bowl. Whisk flour, salt, and baking soda in a separate bowl. Slowly beat flour mixture into shortening mixture to make a smooth dough.
  • Roll dough out 1/4-inch thick on a floured work surface and cut into shapes. Arrange cookies on baking sheets.
  • Bake in the preheated oven until cookies are firm, about 10 minutes. Let cool.
