BROWN SUGAR BAKED BEANS

- Preheat the oven to 350 degrees F.
- Put the bacon in a large, cold skillet and cook over medium heat until the fat renders and the bacon is almost crisp, about 8 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add 1 of the cans of beans with their liquid. Drain and rinse the remaining beans, then add them to the skillet. Add the ketchup, sugar, mustard, vinegar, Worcestershire, 1/2 teaspoon salt and pepper to taste. Bring to a low simmer, then transfer to a small baking dish. Bake uncovered until thickened and bubbly, about 50 minutes. Serve warm.
GREEN BEANS & CHEESE ON TOAST
Just like the title says! :) My mom used to make this for us when we were living at home ... I don't make it much , but I really enjoy it when I do! These ingredients are subject to messing with , as always :) Some people like LOTS of cheese, some don't :) Your call!

- Heat your beans up , microwave them , in a pan on the stove -- your choice :)
- In a small saucepan, over low heat, melt the cheddar cheese and evaporated milk until smooth in consistancy.
- While your cheese is melting , make your toast!
- Place 1 piece of toast on a plate , top with desired amount of green beans , and drizzle with the melted cheese.

ROASTED GARBANZO BEANS/CHICKPEAS
These are addictive little snacks. Crunchy and flavorful BUT actually good for you too! The spicier you get these the better imho! Plus, spicy foods are supposed to increase your metabolism! A reviewer said these made their mouth dry- Guess they might also increase my water intake! :) Make sure to get them good and dry before baking and they will cook more quickly.

- Drain garbanzo's in a strainer and rinse well with cool water. Shake to help remove water. Let sit to drain while proceeding.
- Cover a rimmed cookie sheet or shallow casserole dish with cooking spray. Pour garbanzos on the foil and spread them into a single layer. Take a few sheets of paper towel and gently press over the top of the beans just to remove any extra liquid- speeds cooking time too.
- Spray top of beans with cooking spray and sprinkle seasonings over the beans. Shake pan to help distribute the seasoning and make sure the beans are all in a single layer.
- Place pan in an oven and set to 350 F- no need to preheat. Use lowest rack on oven and return every 15-20 minutes or so to shake the pan so nothing burns. Be gentle or they may spill over the sides. Cook until beans are browned and crispy. About 45 minutes.
- Remove from oven and pour into a plastic bowl with tight fitting lid to cool. Careful they are HOT to the touch!
- Snack away! Keep these stored in the bowl for best freshness or in a ziploc bag.
WISCONSIN CHEESE 'N BEER SOUP
When I lived in Wisconsin, this was a staple at every restaurant. I got this recipe from a friend and did a little tweeking to suit my taste, and it is so good!

Steps:
- In a medium saucepan, melt butter and cook flour over medium heat, stirring constantly, 3 minutes or until bubbling.
- Stir in soup mix, milk and worcestershire sauce.
- Mix well.
- Bring just to boiling point, then simmer, stirring occasionally, for 10 minutes.
- Stir in remaining ingredients and simmer, stirring constantly, 5 minutes or until cheese is melted.
- Garnish with popcorn.
WISCONSIN MAC AND CHEESE
Buttered steamed broccoli and carrots are great with this ultimate comfort food; end with grapes and cookies.
Yield 2 Servings; can be doubled

- Cook macaroni in medium saucepan of boiling salted water until tender but still firm to bite. Drain.
- Meanwhile, grind bread in processor to fine crumbs; transfer to small bowl. Melt butter in medium saucepan. Mix 1/2 tablespoon into crumbs. Add flour to remaining butter; whisk over medium heat 2 minutes. Gradually whisk in milk and broth. Bring to boil, whisking constantly. Add green onions. Whisk 2 minutes longer. Remove from heat. Add cheese; stir until melted.
- Preheat broiler. Mix macaroni into sauce. Season to taste with salt and pepper. Spoon into 9-inch pie plate. Sprinkle crumbs over. Broil until crumbs brown, about 2 minutes, and serve.
BACON FETA BEANS
This is a nice green bean dish for company that's low carb, too. Reheats nicely for leftovers.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned but only slightly crisp. Drain grease, leaving a small amount in the skillet for later use. Crumble bacon, reserving 2 tablespoons for garnish, and set aside.
- Cook frozen beans in a covered, microwavable dish for about 3 minutes until thawed, but not fully cooked. Drain liquid, pat dry, and set aside.
- Reheat skillet with residual bacon grease over medium-high heat. Stir in bacon and garlic until garlic is lightly golden. Add green beans and feta cheese, and season with onion powder and black pepper. Cook and stir until most of the feta cheese has melted, about 2 minutes. Transfer to a serving dish, and garnish with remaining feta cheese and crumbled bacon. Serve hot.
