SOFT NO-KNEAD DINNER ROLLS
Really nice dinner rolls that are easy to make and good to eat. Brush rolls with melted butter when they come out of the oven.

Steps:
- Place yeast and 2 teaspoons sugar in a medium bowl. Pour in water. Let stand until frothy, about 5 minutes.
- Place remaining sugar, flour, and salt in a separate bowl; mix to combine. Make a well in the center. Add yeast mixture, milk, eggs, and butter. Mix with a wooden spoon until a thick, sticky batter forms.
- Cover dough with a clean, damp dish towel and place in a warm place. Let rise until almost tripled in volume, 1 1/2 to 2 hours.
- Line a 9x13-inch baking pan with parchment paper, leaving an overhang on 2 sides. Punch dough down to deflate. Mix briefly in the bowl to get rid of bubbles.
- Dust a work surface with flour. Scrape dough out and dust the top with flour. Cut into 4 pieces, then cut each piece into 3 pieces.
- Press down 1 piece of dough with your palm. Use your fingers to gather it into a ball. Flip so the smooth side faces up and roll briefly to form a ball. Place roll in the prepared baking pan. Repeat with remaining dough. Line up rolls in a 3x4 grid in the baking pan. Spray the surface of the rolls with cooking spray. Cover with plastic wrap.
- Place baking pan in a warm place and let rise until almost doubled in size, 30 to 45 minutes. Halfway through the second rise, preheat the oven to 350 degrees F (175 degrees C).
- Bake rolls in the preheated oven until surface is golden brown, 15 to 18 minutes. Use parchment paper overhang to lift rolls onto a cooling rack. Serve warm.

YUMMY NO KNEAD BREAD ROLLS

- Soften yeast in luke warm water, Cool.
- Place shortening, sugar and salt in a large.
- bowl.
- Add boiling water, stir until fat is melted & sugar is dissolved.
- Cool until luke warm then add yeast.
- Beat in unbeaten eggs.
- Stir in 1/2 flour, mix until smooth.
- Add remaining flour, mix til smooth.
- Place dough in greased bowl, turn dough over to coat with oil.
- Chill 2 to 24 hours.
- Shape as desired and place in greased pans.
- Brush w/melted butter.
- Set in warm place.
- When doubled in bulk, bake in preheated oven.
- Brush with melted butter after removing from the oven.
- 425 F 15 to 20 min., small rolls.
- 425 F 20 to 25 min., med. rolls.
- 400 F 25 to 30 min., lg. rolls.

DELICIOUS NO KNEAD REFRIGERATOR ROLLS
My aunt made these rolls for a post New Year's Eve get together and they were to die for. Delicious! I made them after getting the recipe for her and they are incredibly easy as well. A great recipe for a first time bread maker or and experienced pro! I haven't tried this in the bread machine dough cycle yet, but if you have a large capacity machine, I don't see why it wouldn't work! Enjoy :)

- In a large bowl, dissolve yeast in warm water and set aside to proof.
- In another bowl, mix together sugar, salt, shortening, and egg with an electric mixer at low speed.
- Add mixture to yeast, and stir in flour; The last 3 cups of flour will have to be mixed in by hand.
- Cover dough with a damp cloth, and place in refrigerator; Punch down occasionally as dough rises; (You can leave dough in refrigerator overnight).
- Two hours before baking, shape the dough into rolls.
- Place on greased pans, baking trays or muffin pans; Let rise 2 hours.
- Bake at 400 degrees F for 8 to 10 minutes.
NO-KNEAD DINNER ROLLS
I have never had these fail. I'm always asked to bring these or make them for Thanksgiving or Christmas. They're always a big hit. They make a dozen good size rolls, I always double the recipe to make two dozen.

- In a large bowl, combine yeast, 1 1/2 cups of warm water, sugar, melted butter that has cooled to warm and salt.
- Stir in flour, it might not take the full 4 cups. I mix it in my food processor or mixer with dough hook. Cover bowl with plastic wrap and let rise in warm place till doubled, 45 minutes to an hour.
- Punch dough down. On a floured surface divide dough into 12 equal rolls. Roll each piece into a ball, place into a large oiled baking dish, I double the recipe and put them all into a big 10/14 in pan or glass baking dish. Cover lightly and let rise until almost doubled.
- Uncover and bake in a 400°F oven until golden, 15-18 minutes. Brush with butter.
EASY NO-KNEAD CHALLAH BREAD
A fabulously easy recipe from "Artisan Bread in Five Minutes a Day" by Jeff Hertzberg and Zoe Francois that bakes a beautiful golden laof. This recipe takes very little effort (you basically need to mix ingredients in a bowl for a minute), but you do need to give the dough time to rise. Makes four 1-pound loaves. The recipe is easily doubled or halved. You can freeze or refrigerate unused dough.

- Mixing and storing the dough: Mix the yeast, salt, eggs, honey, and melted butter (or oil) with the water in a 5-quart bowl, or a lidded (no airtight) food container.
- Mix in the flour without kneading, using a spoon, a 14-cup capacity food processor (with dough attachment), or a heavy-duty stand mixer (with dough hook). If you're not using a machine, you may need to use wet hands to incorporate the last bit of flour.
- Cover (not airtight), and allow to rest at room temperature until the dough rises and collapses (or flattens on top), approximately 2 hours.
- The dough can be used immediately after the initial rise, though it is easier to handle when cold. Refrigerate in a lidded (not airtight) container and use over the next 5 days. Beyond 5 days, freeze in 1-pound portions in an airtight container for up to 4 weeks. Defrost frozen dough overnight in the refrigerator before using. Then allow the usual rest and rise time.
- On baking day, butter or grease a cookie sheet or line with parchment paper, or a silicone mat. Dust the surface of the refrigerated dough with flour and cut off a 1-pound (grapefruit-size) piece. Dust the piece with more flour and quickly shape it into a ball by stretching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter-turn as you go.
- Divide the ball into thirds, using a dough scraper or knife. Roll the balls between your hands (or on a board), stretching, to form each into a long, thin rope. If the dough resists shaping, let it rest for 5 minutes and try again. Braid the ropes, starting from the center and working to one end. Turn the loaf over, rotate it, and braid from the center out to the remaining end. This produces a loaf with a more uniform thickness than when braided from end to end.
- Allow the bread to rest and rise on the prepared cookie sheet for 1 hour and 20 minutes (or just 40 minutes if you're using fresh, unrefrigerated dough).
- Twenty minutes before baking time, preheat the oven to 350°F If you're not using a stone in the oven, 5 minutes is adequate. Brush the loaf with egg wash and sprinkle with the seeds.
- Bake near the center of the oven for about 25 minutes. Smaller or larger loaves will require adjustments in baking time. The challah is done when golden brown, and the braids near the center of the loaf offer resistance to pressure. Due to the fat in the dough, challah will not form a hard, crackling crust. Allow to cool before slicing or eating.
NO KNEAD PARKER HOUSE ROLLS
These rolls are so easy to make and tasty too! Original recipe comes from thepioneerwoman.com however I've converted it to use instant yeast. If using regular yeast, increase by 25%. To obtain less sweet rolls, I reduce the sugar slightly.

- Pour 2 cups of milk into a stock pot or Dutch oven.
- Add sugar and vegetable oil.
- Stir to combine.
- Now, turn the burner on medium to medium-low and scald the mixture. Do not let it boil.
- Remove from heat and allow this mixture to cool to warm/lukewarm, 90 - 110 degrees. .
- When the mixture is the right temperature add in 2 cups of flour and yeast. After the yeast and flour are nicely incorporated, add another 2 cups of flour. Stir together, cover with plastic wrap and allow to sit until doubled in size, 45 minutes to 1 hours, depending on the heat of your kitchen.
- When it has risen sufficiently add the final 1/2 cup of flour, 1/2 heaping teaspoon of baking powder, 1/2 scant teaspoon of baking soda and salt. Stir (or knead just a bit) until combined.
- Spray a muffin pan with non-stick spray, I prefer butter flavored with bread.
- Deflate the dough and very lightly sprinkle flour on the top.
- With floured hands, form the rolls by pinching off a walnut size piece of dough and rolling it into a little ball.
- Repeat and tuck three balls of dough into each buttered muffin cup. Continue until pan is full.
- Cover and allow to rise for about 1 hour; until doubled in size.
- Bake in a 400-degree oven until golden brown, about 15 to 18 minutes.
