HONEY HAM SANDWICH

- For the biscuits: Preheat the oven to 475 degrees F.
- Sift together the flour and salt into a large bowl. Add the butter and shortening and cut together with a pastry cutter. Gently stir in the buttermilk using a fork. Knead the mixture a few times with your hands until the dough comes together.
- Tip the dough onto a floured surface and roll out to about 1/2 inch thick. Using a 3-inch round cutter, cut out 12 biscuits and transfer to a baking sheet.
- For the topping: Brush the biscuit tops with 2 tablespoons of the melted butter and bake until golden, 13 to 15 minutes. Allow the biscuits to cool slightly, 4 to 5 minutes.
- Meanwhile, whisk together the honey, Dijon, parsley and remaining 8 tablespoons melted butter in a small saucepan over medium heat. Bring to a simmer and remove from the heat.
- For the sandwiches: Preheat the broiler.
- Split the biscuits in half and return to the baking sheet cut-side up. Brush the cut sides with the honey butter. Place 2 halved ham pieces on the bottom of each biscuit and top each with a slice of cheese. Broil until the cheese is melted, 1 to 2 minutes. Carefully remove from the oven and pour over the remaining honey butter. Place the tops on the biscuits and serve.
YUMA DIP SANDWICHES
Marinated top round on French bread with onions and mushrooms, dipped in a Southwestern-style cheese sauce. Excessive and indulgent--but way, way, satisfying! Fun guest or party food.

- Place the top round and entire bottle of salad dressing in a resealable plastic bag and marinate in the refrigerator for 24 to 48 hours.
- When meat is fully marinated and you're ready to prepare sandwiches, preheat oven to broil.
- In a large skillet over medium heat, saute the onions and mushrooms in the butter or margarine for 10 minutes, or until onions are tender. Set aside.
- Broil the meat for 5 to 7 minutes per side for medium rare. Remove from oven and slice thinly against the grain. Place slices evenly on the bread and cover with the onion mixture.
- In a microwave-safe bowl, combine the cheese, salsa and olives. Microwave for 3 to 4 minutes on high, or until the cheese is melted. Stir well and serve with the sandwiches.

DISAPPEARING PEAR HONEY
I looked at all of the recipes I could find and smashed them all together in this one. I am very pleased with the results. The honey stands out nicely with the fruit flavors.

- Puree the lemon in a food processor.
- Mix all ingredients thoroughly in a stock pot.
- Cook on medium heat until thick, stirring occasionally.
- Pour into pint jars.
- Cap and put in a 10-minute water bath.
- Let cool, store, and watch it disappear.

Steps:
- Combine the pear juice, sugar, pears and lemon zest and juice in a large saucepan. Cook over medium-high heat until the pears are fork-tender, about 15 minutes.
- Using a slotted spoon, remove the pears from the liquid and set aside.
- Continue cooking the liquid until syrupy and reduced by half, about 15 minutes more. Let cool slightly.
- Puree the pears and the pear syrup in a blender until smooth. Pass through a fine sieve into a bowl. Chill in the freezer until partially frozen, about 1 hour.
- Beat the pear mixture with a whisk until creamy. Return the bowl to the freezer and repeat the whisking process every hour until the sorbet has a smooth, luscious texture (about 4 hours total).
- To serve, scoop the sorbet into bowls and garnish with candied ginger and basil.

- You can use an ice cream maker if you have one; follow the manufacturer's instructions.
