ZA'ATAR-SPICED ZUCCHINI
Za'atar, a Middle Eastern spice mix made from dried thyme, sumac, and sesame seeds, gives this grilled zucchini a fragrant and herbal twist.

Steps:
- Heat a charcoal or gas grill; the fire should be medium-low and the rack about 4 inches from the heat.
- Cut 1 1/2 pounds zucchini into 1/2-inch-thick slices.
- Stir 1/4 cup za'atar and 2 tablespoons olive oil into a paste; season with salt and pepper.
- Rub zucchini with za'atar and grill, turning once, until nicely browned and tender, 6 to 8 minutes. Garnish with parsley.

ZA'ATAR ZUCCHINI
i threw this dish together when i wanted to do something extra special with zucchini. i was thinking of the delicious zucchini-feta balls the lady at a moroccan food truck in philly used to have me try with my regular falafel. with the addition of the zatar, the dish is very middle eastern, and the feta grounds and warms everything.

Steps:
- chop onion and zucchini.
- heat olive oil in pan on medium-high.
- saute onions until translucent.
- add zucchini, zatar, and pepper; saute over medium heat until onions are browned and zucchini is cooked through transfer to serving bowl and stir in feta cheese.

- Put zucchini noodles in a large bowl; snip into 4- to 6-inch lengths using kitchen shears. Add tomatoes, carrot, and chives. Drizzle with balsamic vinegar and oil and sprinkle with za'atar and salt; toss to combine. Sprinkle with Parmesan. Serve immediately or chill, covered, for up to 1 day.

- Slice the zucchini on the diagonal, into ½ inch thick slices and place into a large bowl. Drizzle w/ olive oil, sprinkle w/ salt and zaatar spice and add the finely minced garlic. Using your hands, toss to combine until well mixed.
- Place zucchini on the hot grill using tongs. Turn heat down to medium high and close the lid and give a good sear, about 5 minutes. when there are good grill marks, turn over. turn heat down to medium, cover, grill until cooked through about 5 more minutes. If you like them very tender, move them to an upper rack, cover and continue to cook, on very low heat or place in a pan and cover with foil, letting them steam.
- When cooked to desired tenderness, place zucchini on a platter. One one side of the platter, or in a little bowl, spoon on Smoked Yogurt, Geek style yogurt or Labneh, garnish with a few cherry tomatoes, sprinkling of italian parsley, a squeeze of lemon and if you like a little drizzle of olive oil. Sprinkle Aleppo pepper over the yogurt for a little heat. This is delicious with Grilled Chicken Shawarma! andIsreali Salad
