ZELOVA VOMACKA (SAUERKRAUT GRAVY)
This is another Czech recipe that my grandmother used to make. This is great over potato dumplings or over fresh rye bread.

Steps:
- Melt lard and add flour, stirring well.
- Add 2 cups sauerkraut juice, stirring constantly and bring to a hard boil.
- Add milk slowly, stirring constantly. I warm the milk slightly so it doesn't curdle when added.
- Add sauerkraut and stir.
- Serve over potato dumplings or fresh rye bread slices.

- Reduce heat to low and add the caraway seeds.
- Stir in the flour until it is well combined and cook on low for 2 minutes.
- Add all remaining ingredients to the skillet and cook for about 5-7 minutes or until everything is heated through. Do not allow to boil.

- Take a large pot with a thick bottom. Put the lard in it, heat it, add the onion and fry it until lightly golden.
- Dust with sweet paprika, add the crushed caraway seeds and flour, fry for a minute while stirring it a lot. This way, you’ll prepare the roux, which thickens the soup.
- Add in a little broth and mix, so the roux dissolves. Stir and add in the broth gradually. Stir it with a spoon or whisk it so that no lumps form.
